Easy Vegetable Beef Soup

Ingredients

Add the bouillon cubes

to the hot water to dissolve.

********

(If you don’t have

bouillon you can use beef broth, Better

Than Bouillon or similar product

instead of the water and bouillon.)

Boil 4 cups of water in a

small pan over medium heat.

Cook the pasta Al dente according to

the package directions and drain.

In a large deep pot, fry the ground

beef, onion and garlic over medium

heat until the ground beef is no longer pink.

Discard any grease.

Add the tomatoes to the

ground beef and stir.

Add the water with dissolved bouillon,

pasta and mixed vegetables.

Add salt & pepper to taste.

Bring to a boil over medium

heat and cook until the

vegetables are tender then serve.

 

Easy Vegetable Beef Soup

Ingredients

  • 1# ground beef
  • 1 small onion, peeled and chopped
  • 2 cloves garlic, minced
  • 2 – 14.5 oz cans diced tomatoes
  • 6 cups hot water
  • 6 beef bouillon cubes
  • 12 oz frozen mixed vegetables
  • 3/4 cups small shell pasta
  • salt & pepper to taste

Directions

  1. Place the bouillon cubes in the 6 cups of hot water to dissolve. (If you want you can eliminate the water and bouillon and just use 6 cups of beef broth.)
  2. In a small pan, boil 4 cups of water over medium heat and cook the pasta according to the package direction. Drain and set aside.
  3. Cook the ground beef, onion and garlic in a deep pot over medium heat until no more pink remains. Drain any grease.
  4. Add the tomatoes to the ground beef and stir.
  5. Add the bouillon water, cooked pasta and frozen mixed vegetables to the ground beef.
  6. Add salt & pepper to taste.
  7. Bring to a boil, cooking until the vegetables are tender then serve.
