Parmesan Baked Tomatoes

Dinner was on my own last night because my husband had to work. The grandkids like frozen pizza so I decided to take a break from cooking and give them pizza. (Yes occasionally I am a bad grandma and give them frozen food) I decided to make these Parmesan Baked Tomatoes and I ate them all myself! They only take a few minutes to prepare, a few minutes to bake and they taste fantastic! Serve them as a side dish with a meal, an appetizer or use them as your meal like I did.

Ingredients

Cover a baking sheet with

parchment paper.

Wash the tomatoes and dry them with a

paper towel. Slice the tops off and discard.

Slice each of the tomatoes into 3 thick slices.

Place the tomato slices

on the baking pan.

Sprinkle the tomatoes with salt,

pepper and dried basil.

Sprinkle the freshly grated Parmesan

Cheese evenly on top of the tomatoes.

Drizzle olive oil over the top of the cheese.

Bake in a preheated 400 degree oven for

5-10 minutes or until the cheese is melted

and a light golden color.

Garnish with fresh parsley and serve.

 

Parmesan Baked Tomatoes

Ingredients

  • 2 large beef steak tomatoes
  • salt to taste
  • pepper to taste
  • 1 tsp dried basil
  • about 1/2 cup freshly grated Parmesan cheese
  • olive oil
  • fresh parsley for garnish, optional

Directions

  1. Preheat oven to 400 degrees.
  2. Wash the tomatoes and dry with a paper towel.
  3. Cut the top off of the tomatoes and discard.
  4. Slice each tomato into 3 thick pieces.
  5. Cover a baking sheet with parchment paper.
  6. Place the tomato slices on the pan.
  7. Sprinkle tomatoes with salt, pepper and dried basil to taste.
  8. Sprinkle tomatoes evenly with the freshly grated Parmesan Cheese.
  9. Drizzle the tomatoes with olive oil.
  10. Bake for 5-10 minutes or until the cheese is a light golden brown.
  11. Remove from the oven and place on a serving plate.
  12. Garnish with fresh parsley and serve.

    This is not so bad… frozen food can be tasty and healthy too. Pizza is not healthy but sometimes it’s good to cheat a bit !

  2. They look so appetizing, Diane. Thank you for this suggestion. We usually buy a tray of tomatoes at Costco, and at times have trouble eating them all before they go bad. This is a great way to turn them into a quick meal!

  3. Sounds good to me. I have a real Italian pizza maker but have to admit it does frozen pizza better. Also can do most flapjack dishes in this electric oven too. High temp and fast cooking. Make my own freeze it and use in switched on over 4 minutes from hot and busy all day it can save so much time and all love these real Italian pizza. Will do the cheese tomato next time in this oven and set on stone bake should be good.Thank you .I do not think you are bad for using frozen pizza some of bought bases are that good when cooked who cares?
