Southern Biscuit Muffins

Ingredients

Grease a 12 cup (2-1/2” cups) muffin tin.

Do not use cupcake papers or the

muffins will not brown properly.

In a large bowl combine the flour,

baking powder and sugar.

Add the cold butter and using a pastry

blender, cut the butter into the flour

mixture until it resembles coarse crumbs.

Add the milk.

Use a fork and mix the flour mixture and

milk together just until the flour is all wet.

Using a spoon, place the batter into the

greased muffin pan in equal proportions.

Bake in a preheated 400 degree

oven for 20 minutes.

Remove from the pan and

cool on a cooling rack.

Serve warm or store

in an airtight container.

Ingredients

  • 2-1/2 cups all purpose flour
  • 1/4 cup sugar
  • 1-1/2 Tbsp baking powder
  • 3/4 cup cold butter
  • 1 cup cold milk

Directions

  1. Preheat oven to 400 degrees.
  2. Grease a 12 (2-1/2″ cup) muffin pan. Do not use the paper liners or the muffins will not brown properly.
  3. In a large bowl whisk together the flour, sugar and baking powder.
  4. Add the cold butter and using a pastry blender, cut the butter into the flour until the mixture resembles coarse crumbs.
  5. Add the milk and mix with a fork just until the flour is all wet.
  6. Using a spoon, place the batter evenly into the greased muffin pan.
  7. Bake for 20 minutes.
  8. Remove the muffins from the pan and place on a cooling rack.
  9. Serve warm or store in an air tight container.
  10. Serve with butter, honey, jelly or jam.
