Southern Biscuit Muffins
No rolling pin, no kneading, no added salt, easy and delicious Southern Biscuit Muffins. Spread some butter, jelly, jam or even honey on these muffins for a fabulous taste!

Ingredients
Grease a 12 cup (2-1/2” cups) muffin tin.
Do not use cupcake papers or the
muffins will not brown properly.

In a large bowl combine the flour,
baking powder and sugar.
Add the cold butter and using a pastry
blender, cut the butter into the flour
mixture until it resembles coarse crumbs.
Add the milk.
Use a fork and mix the flour mixture and
milk together just until the flour is all wet.
Using a spoon, place the batter into the
greased muffin pan in equal proportions.
Bake in a preheated 400 degree
oven for 20 minutes.
Remove from the pan and
cool on a cooling rack.
Serve warm or store
in an airtight container.

Well, that’s a different spin on biscuits. But I like it. 🙂

I’ll be vicariously enjoying it through your pictures – maybe you’ll inspire me to make that treat for Christmas breakfast. I’d have to dust off my cookie sheets first to make the biscuits. I mean REALLY dust ’em off. I’ve not baked anything in about seven or eight years. I store all my pots/pans in the oven. I’d be afraid to turn on the stove after all these years, but I’m sure since it is not dirty with any food baked on, it will be fine. 🙂
