Amish Mandarin Orange Cake

Have you ever heard of such a thing as Mandarin Orange Cake? I never have so of course I had to try it. I found this recipe in “Amish Family Favorites” cookbook and the recipe was by Mrs. David Ray Yoder. The recipe was very vague so I wasn’t sure if it would turn out but it did. I rewrote the recipe so you could understand it. After some research about this cake I saw where it was common to frost it with a Whipped Pineapple Frosting. Mrs. Yoder didn’t use this frosting, she just put a dollop of fresh whipped cream on hers. You can make yours either way you would like.

Ingredients

Whisk the flour, baking soda

and salt together.

In a medium bowl add the eggs, sugar and

entire can of mandarin oranges, liquid too.

Using a mixer, blend on low speed until combined

and mandarin oranges are no longer in segments.

Add flour mixture.

Using a mixer, mix well for about

2 minutes on medium speed.

Grease and flour a 9” x 13” cake pan.

Pour cake batter into the pan.

Bake in a preheated 325 degree oven

for 45 – 55 minutes or until a toothpick

inserted in the center comes out clean.

Amish Mandarin Orange Cake

Ingredients

  • 1-1/2 cups granulated sugar
  • 2 cups all purpose flour
  • 2 eggs
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1 – 11 oz can mandarin oranges, undrained

Directions

  1. Preheat oven to 325 degrees.
  2. In a small bowl whisk the flour, baking soda and salt together.
  3. In a medium bowl add the eggs, sugar and the entire can of mandarin oranges, juice too.
  4. Using a mixer on low speed, mix until combined and there are no more mandarin orange segments visible.
  5. Add flour mixture to the orange mixture.
  6. Using a mixer, mix for about 2 minutes and until combined.
  7. Grease and flour a 9″ x 13″ cake pan.
  8. Pour batter into the pan.
  9. Bake for 45-55 minutes or until a toothpick inserted I the center comes out clean.
  10. Frost with Whipped Pineapple Frosting. Link for frosting is below.
