West Coast Chicken

Now I see why so many people love the West Coast, their recipes! Bone in, skinless thighs and only 316 calories per 4 oz serving. What a different and nice change of flavor eating chicken.  After seeing this recipe I just had to try it! I knew it would be good because it is made with chicken thighs and they are my absolute favorite part of the chicken.

Ingredients

Remove the skin and excess fat from the chicken.

Combine the rest of the ingredients

and whisk until combined.

Oil a pan that just fits all the chicken.

Add the chicken thighs making sure

they are all flat and do not over lap.

Pour the orange mixture over the top.

Refrigerate for 1 hour.

Bake in a preheated 350 degree oven,

uncovered, for 1 hour then serve.

After 30 minutes of baking, baste the

chicken with the hot orange mixture in the pan.

 

West Coast Chicken

Ingredients

  • 2 tsp salt
  • 1/4 tsp pepper
  • 1 cup frozen orange juice concentrate, thawed
  • 1/3 cup butter, melted
  • 2 tsp ground ginger
  • 4 tsp soy sauce
  • vegetable oil, enough to coat the pan
  • 5#’s chicken thighs, bone in and skin on

Directions

  1. Oil an oven safe pan large enough to just fit the chicken in.
  2. Remove the skin and excess fat from the chicken thighs.
  3. Add the chicken to the pan.
  4. In a small bowl combine the rest of the ingredients, whisking until combined.
  5. Pour orange mixture over the chicken.
  6. Put the pan in the refrigerator for 1 hour.
  7. Remove chicken pan from the refrigerator and preheat oven to 350 degrees.
  8. Bake chicken for 60 minutes, basting with the hot orange mixture in the pan after 30 minutes.
  9. Baste again just before serving.

  1. This sounds so good! The thighs are my favorite too although I only started cooking with them in the last few years. I’m always on the lookout for new recipes for them, can’t wait to try this one. Thanks as always!
