Cheesy Gnocchi & Italian Sausage

Wow was this one pan meal absolutely fantastic and I found myself wanting more the next day! If you have never tried Gnocchi, it is usually made from potatoes and it is a type of dumpling. Normally they are cooked in boiling water but with this recipe they are not. I made this with hot Italian sausage and it was amazing but you can also use mild sausage, whatever your prefer.

Add olive oil to an oven safe

frying pan (like cast iron) and

heat the pan over medium heat.

Add the gnocchi and stir frequently cooking

7-8 minutes until they start getting brown.

Remove the gnocchi from the pan.

Add the sausage to the same pan

cooking until no pink remains.

Preheat the broiler.

Add the diced tomatoes, garlic,

basil, oregano, salt and pepper

and bring to a simmer.

Return the gnocchi to the pan and mix.

Stir in the cream and cook until hot.

Top with the cheese.

Place the pan under the broiler for about

2 minutes, watching carefully, until the

cheese is melted and brown. Top with parsley.

Place in serving bowls and enjoy!

Ingredients

  • 16 oz fresh gnocchi
  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • 12 oz Italian sausage (I used hot)
  • 1 – 14.5 oz can diced tomatoes
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • salt, to taste
  • pepper, to taste
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 2 Tbsp fresh parsley for garnish

Directions

  1. Preheat the broiler.
  2. In a large oven safe frying pan such as cast iron, add olive oil and heat over medium heat.
  3. Once hot add the gnocchi and fry, stirring frequently, for 7-8 minutes until the gnocchi start to brown.
  4. Remove the gnocchi from the pan.
  5. Add the sausage to the pan and cook until no pink remains.
  6. Add the diced tomatoes, garlic, basil, oregano, salt and pepper. Bring to a simmer while stirring.
  7. Add the gnocchi back into the pan and stir.
  8. Add the cream, stir, cooking until hot.
  9. Add the cheese to the top.
  10. Place under the broiler for about 2 minutes or until the cheese is melted and a golden brown. Watch it carefully so it doesn’t burn.
  11. Top with parsley and serve.

  3. This looks delicious! I’m not a huge fan of gnocchi but substituting it with other pastas such as spaghetti sounds like the perfect weeknight meal.
