Cheeseburger Macaroni Casserole

Hmmm I bet you are wondering what the heck is Cheeseburger Macaroni Casserole. This is a dish you can make up ahead of time and when you get home all you have to do is pop it in the oven! I love recipes like this when I have a busy day and don’t have time to fix supper when I get home. This recipe is a complete meal and very tasty!

Ingredients

In a large frying pan over medium heat,

melt the butter and sauté the onion and

garlic (or add the garlic powder and dried onion)

until the onion is translucent.

Add the ground beef and cook until no

pink remains, discarding excess fat.

Add tomato sauce, salt, pepper, oregano

and corn. Stir and simmer a few minutes.

Spray a 3 quart casserole dish

with cooking grease.

Pour the hamburger mixture into the dish.

Cook the macaroni according

to the package directions.

Drain the pasta.

Return pasta to the pan and

add the shredded cheese.

Combine the pasta and cheese.

Pour the pasta and cheese on top

of the hamburger mixture. Use a large

spoon and press down on the pasta.

In a small bowl, whisk the eggs with a fork.

Add the eggs to the milk and whisk together.

Pour egg mixture over the macaroni.

Cover and refrigerate at least 2 hours.

 Bake covered in a preheated 350 degree

oven for 1 hour and serve.

Ingredients

  1. 2-1/2 cups uncooked elbow macaroni
  2. 3 Tbsp butter
  3. 1/2 cup minced onion (or 2 Tbsp dried onion)
  4. 2 tsp minced garlic (or 1/4 tsp garlic powder)
  5. 1# ground beef
  6. 16 oz tomato sauce
  7. 1 tsp salt
  8. 1/2 tsp pepper
  9. 1/2 tsp oregano
  10. 8 oz shredded cheddar cheese
  11. 3 eggs
  12. 3/4 cup milk
  13. 11 oz canned corn, drained

Directions

  1. In a large frying pan over medium heat melt the butter. Add the onion and garlic (or dried onion and garlic powder) and sauté until onion is translucent.
  2. Add the ground beef and cook until no longer pink, discarding the fat.
  3. Add tomato sauce, salt, pepper, oregano and corn. Simmer a few minutes then remove from the heat.
  4. Spray a 3 quart casserole dish with cooking grease.
  5. Pour the hamburger mixture into the casserole dish.
  6. Cook the macaroni according to the package directions then drain.
  7. Return the macaroni to the hot pan. Add the shredded cheese.
  8. Combine the pasta and cheese.
  9. Pour the pasta mixture on top of the hamburger mixture.
  10. Press the pasta down with a spoon.
  11. In a small bowl, whisk the eggs. Pour them into the milk and whisk to combine.
  12. Pour the egg mixture over the top of the macaroni.
  13. Cover and put in the refrigerator for at least two hours.
  14. Remove from the refrigerator and let sit for 15 minutes on the counter.
  15. Preheat oven to 350 degrees.
  16. Bake for 1 hour then serve. You can mix it all together or eat it as is.

  1. Sounds delicious. I like Mac Cheese (the only thing on the menu that resembled food during a prolonged stay in hospital) and the kids like burgers – so one day we must give it a try. The only downside is that my wife loves burgers especially those with cheese and then an egg on top, but hates Mac Cheese! There used to be a small cafe near where I lived that would do an awesome burger takeaway – starting as a basic cheeseburger then add an egg or two, throw on a few rashers of smokey bacon and top off with some fresh mushrooms (and possibly a little more cheese). Not a salad leaf in sight. Add some fries …

      • My daughter liked the sound of this so she had a go at cooking her own ‘fast food’ version.

        Shred or break up an Aberdeen Angus beef burger and brown off in the frying pan (add extra onions if you wish). Place in the bottom of a greased round Pyrex dish – medium size just so there’s a good layer of meat on the bottom. Then add a layer of cooked pasta – we used the twirly type. Make up a cheese sauce and pour over. Add a small layer of potato cakes. Sprinkle with a little more grated cheese. Top off with an egg or two and pop in the oven for 5 mins or so until the egg is baked and the cheese nicely brown. Serve and season to choice and eat on its own or with a salad. Some tomatoes layered over the top before the egg may be another option – we’ll have to try it sometime.
