Ham & Cheese Potato Casserole

I made this Ham & Cheese Potato Casserole early in the day and refrigerated it. When I came home after an afternoon out with my grandkids, all I had to do is set it out for about 20 minutes and bake it. I had already washed the dishes I used to prepare this casserole so what an easy meal.

Ingredients – Plus 1-2 cups shredded cheddar for the topping.

Cut the ham into small pieces.

In a small bowl whisk the eggs.

Whisk the eggs and milk together.

In a large bowl place the milk and egg mixture,

sour cream, soup and melted butter.

Whisk mixture together until smooth.

Add the ham, potatoes, salt and pepper.

Stir until well combined.

Spray a 4 quart casserole dish with cooking spray.

Pour the potato mixture into the casserole dish.

Bake in a 350 degree preheated oven, uncovered, for 60 minutes.

Sprinkle the cheese over the top and put back into the

oven a minute or two until the cheese melts then serve.

Ingredients

  • 30 oz frozen hash browns, thawed
  • 1/2 onion, diced
  • 12 oz thick ham slices, cut into bite size pieces
  • 1 can (10.75 oz) cream of chicken soup
  • 1/4 cup (1/2 stick) melted butter
  • 2 eggs
  • 1 cup milk
  • 1 cup sour cream
  • salt & pepper to taste
  • 1-2 cups shredded cheddar cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Cut the ham into small bite size chunks.
  3. In a small bowl, whisk the eggs.
  4. Whisk the milk into the eggs.
  5. In a large bowl place the milk and egg mixture, sour cream, soup and melted butter.
  6. Whisk mixture until smooth and creamy.
  7. Add the ham, potatoes, onion, salt and pepper.
  8. Stir until well combined.
  9. Spray a 4 quart casserole dish with cooking spray.
  10. Pour the potato mixture into the casserole dish.
  11. Bake UNCOVERED for 60 minutes.
  12. Sprinkle the top with the cheese and put back into the oven until melted.

    • OMG Thank you! There is onion in it. If you look at the ingredients picture there is an onion. I did an update to include it in the recipe card where I forgot to add it! Thanks again!!

      • Oh good. We always put onion in ours, which is why I brought it up and I couldn’t resist teasing you as I feel you probably have a good sense of humor!

      • I do but then I freaked out when I saw I left it out of the recipe…hahahaha When my 7 year old granddaughter eats here (she hates onions and won’t touch dinner if they are in the food) I sneak tons of dehydrated onions in when she isn’t looking. As long as she doesn’t see the fresh onion it’s a go…hahahaha

  3. I just happen to have a small ham in the fridge and some hashbrowns in the freezer, I even have sour cream that I was trying to figure out what to do with it. I am going to have this for dinner tomorrow night and let you know how it goes. Another nice and timely share.
