Fresh Southern Peach Cobbler

It’s peach season and time for the best Peach Cobbler I have ever tasted! The topping was so delicious I could make that as a dessert all by itself. But then I scooped up the fabulous peaches with it and it was pure heaven! I wish you could have smelled my house while this was baking because it was amazing!

Ingredients

In a large bowl, combine the peaches,

1/4 cup white sugar, 1/4 cup brown

sugar, 1/4 tsp cinnamon, nutmeg,

lemon juice and cornstarch.

Using a large spoon, toss until

completely combined.

Spray a 2 quart baking dish

with cooking spray.

Pour the peach mixture into

the baking dish.

Bake in a preheated 425 degree

oven for 10 minutes.

While the peaches are baking, in a

large bowl combine the flour, 1/4 cup

white sugar, 1/4 cup brown sugar,

baking powder and salt.

Whisk the dry mixture together until

combined. Put the cut up butter into the

mixture and using a pastry blender

or your fingers, cut the butter into the

flour mixture until coarse crumbs form.

Pour the boiling water into the dry mixture.

Stir just until combined.

Drop mixture by heaping tablespoons

on top of the hot peaches.

Mix the 3 Tbsp white sugar

and 1 tsp of cinnamon.

Sprinkle the cinnamon sugar mixture

evenly over the entire top of the cobbler.

Bake for 30 minutes or until

the top is golden brown.

Ingredients

  • 8 fresh peaches (peeled, pitted, and sliced into wedges)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, firmly packed
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tsp fresh lemon juice
  • 2 tsp cornstarch
  • 1 cup all purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, firmly packed
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 6 Tbsp. butter, chilled and cut into small pieces
  • 1/4 cup boiling water
  • 3 Tbsp granulated sugar
  • 1 tsp cinnamon

Directions

  1. Preheat oven to 425 degrees.
  2. In a large bowl combine the peaches, 1/4 cup granulated sugar, 1/4 cup brown sugar, 1/4 tsp cinnamon, nutmeg, lemon juice and cornstarch. Toss to coat all of the peaches.
  3. Spray a 2 quart baking dish with cooking spray.
  4. Pour the peach mixture into the baking dish and bake for 10 minutes then remove from the oven.
  5. In a large bowl combine flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, baking powder and salt. Whisk to combine.
  6. Using a pastry blender or your fingers, blend the butter into the flour mixture until it resembles coarse crumbs.
  7. Stir the boiling water into the mixture just until combined.
  8. Drop heaping tablespoons of the mixture on top of the peaches.
  9. Combine the 3 Tbsp sugar with the 1 tsp cinnamon and sprinkle evenly over the entire top of the cobbler.
  10. Bake for 30 minutes or until the top is golden brown.
  11. Place the pan on a cooling rack to cool. Serve warm or at room temperature.
  12. Let cool completely then keep tightly covered with plastic wrap.

Years ago the neighbor on the corner had peach trees and plum trees and would say “come pick whatever you want” … used to have plum kuchen and peach cobbler and it’s a wonder I didn’t split my pants. In Romeo, Michigan (a quaint and homey little town, but unfortunately not near me) they will soon have the Romeo Peach Festival. It is always over Labor Day weekend, and a lot of fun with anything and everything made with peaches, a parade down Main Street. This is my kind of town.

  4. This looks like a nice adaptation of the recipe my mother and grandmother’s used, and that I still use. I’ve got a pile of peaches on the counter right now, so I’m going to give this one a try and see how it compares. Of course, I don’t think there ever has been a bad peach cobbler!

  5. Being from the “Peach State” I tend to be more than a tad picky about peach cobbler. This looks delicious Diane. Not eating a lot of desserts lately as my nutritionist’s voice has taken up residence in my head. How anyone can look at and smell peace cobbler and say “It would be a much better choice to just eat a peach” is beyond me, makes no sense at all. Oh well, welcome to my life.

  6. Made this yesterday with pears, added some raisins soaked in brandy for extra sweetness since peaches are so must juicier and sweeter naturally. Came out great! The cinnamon/sugar topping is key.

  7. This reminds me of my childhood. My mother used to make homemade peach cobbler and would serve a scoop of vanilla ice cream on top of it fresh out of the oven. Yum!
