No Peek Chicken & Rice

This was as fabulous tasting as it looks! What a simple and easy No Peek Chicken & Rice recipe! It can be made entirely in one 13” x 9” pan. My Mom sent me this recipe because she loved it so much but I did make a few minor changes. I don’t know where it originated from, to give them credit, but I know it’s been around for a while. I used my homemade onion soup mix in mine but you can use a Lipton Onion Soup dry mix pouch or your favorite. It makes a lot so it will feed a family of 4 – 6 or in our case…..leftovers!

Ingredients:

Plus one recipe of my Homemade Onion Dry Soup Mix below

or you can use one pouch dry onion soup mix from the store.

Pour the melted butter, rice, water and both cans of

soups into an oven safe 13” x 9” baking dish.

Mix until combined.

Place the cut up chicken pieces on top and

sprinkle with the dry onion soup mix.

Cover tightly with aluminum foil. Bake in a

preheated 350 degree oven without removing

the foil for 1 hour and 45 minutes.

Remove the foil and use a thermometer to

see if the chicken is done (at least 165 degrees).

If not continue cooking, covered, until it is.

Place the chicken and rice on serving plates and dig in!

Ingredients

  • 1 Tbsp butter, melted
  • 1 – 10.5 oz can cream of chicken soup
  • 1 – 10.5 oz can cream of celery soup
  • 10 oz water
  • 1 cup long grain rice, uncooked
  • 1 package Lipton dry onion soup mix or follow this link and make my homemade version. http://indianeskitchen.com/2018/02/26/homemade-onion-dry-soup-mix
  • 1 chicken cut up or pieces of your choice, bone in skin optional

Directions

  1. Preheat oven to 350 degrees.
  2. In a 13” x 9” oven safe dish put in the melted butter, both cans of soup, rice and water.
  3. Whisk until combined.
  4. Place the chicken pieces on top of the soup mixture.
  5. Sprinkle the dry onion soup evenly over the top of the chicken and rice.
  6. Cover tightly with foil.
  7. Bake for 1 hour 45 minutes without removing the foil.
  8. Remove the foil and using a thermometer make sure the chicken is done (at least 165 degrees).
  9. Place on serving plates and enjoy!

  1. I have made a very similar dish as this before, but never put onion soup on top. That is an interesting twist. I might have to try that. Thanks for sharing.
