Ham & Pasta Salad

Cold pasta, broccoli and ham lightly coated with a delicious Herbed Parmesan Dressing. (http://indianeskitchen.com/2018/08/03/herbed-parmesan-dressing) You can even add chopped green pepper and chopped onions if you prefer. Make your dressing the night before and this is a quick and easy salad to put together.

Ingredients

Cook the pasta according to the package directions.

Drain the pasta and let cool to room temperature.

Cook the broccoli according to the package

directions and chop into smaller pieces.

Return the pasta to the pan and

pour the dressing on top.

Gently toss the dressing into the pasta.

Add the ham and broccoli to the pasta.

Gently toss with a large spoon and refrigerate

at least 6 hours, covered, then serve.

Ingredients

  • 10 oz frozen broccoli
  • 10 oz pasta
  • 12-16 oz cooked ham, skin removed and julienned
  • 1 small green pepper, 1/2 cup chopped (optional)
  • 2 Tbsp finely chopped onion (optional)
  • Herbed Parmesan Dressing (link below) or your favorite

Directions

  1. Cook the pasta according to the package directions and drain. Set aside until room temperature.
  2. Cook the broccoli according to the package, drain and set aside. Let cool then chop into small pieces.
  3. Add the Herbed Parmesan Dressing to the pasta and toss gently to coat.
  4. Add the julienned ham and chopped broccoli (green pepper & onion) and toss gently until everything is coated.
  5. Refrigerate, covered, for at least 6 hours then serve.

      • I made this today (with your lemon parmesan dressing) and it was amazing! I put it over pasta with peppers and green onions. So perfect for the heat wave we’re having at the moment! I made a double batch of the dressing for salad too. Thanks again for your great recipe ideas!!

  2. So simple. I wasn’t thinking of broccoli, but that is a nice change. I would probably add green onion as well, but I am going to try this one during the week. Yum.

    • Yes change it up to your own liking! Chicken, beef or whatever meat you want to use along with the veggie. I almost put peas in it instead of broccoli! I just finished the last of ours for lunch.

  3. That’s a great meal for hot days … our last four days would be perfect for this dish. My mom used to make this a lot in the Summer, sometimes substituting smoked sausage.

    I’m hopelessly behind in Reader, between my work schedule and these storms … we have another one coming in in an hour or so – I’m hoping to catch up a little first. Doing two long blog posts over the weekend also put me behind.

      • That smoked sausage was good with it … my mom used to just use the Suddenly Salad with the Italian seasonings and add some more Italian seasonings and we often had that in the Summer. The smoked sausage was easier to slice cold with no cooking necessary.

        I did a long blog post tonight and it is 10:00 and I’m just going through comments … I’ve been horribly busy at work, and before I used to pop on during the day to do Reader but that hasn’t happened in about 3-4 months. That pesky work gets in the way sometimes! I am behind with e-mails with friends and on Facebook as well. When we retire, we’ll catch up on everything.
