Herbed Parmesan Dressing
If you love a tart salad dressing rather than a sweet one, this recipe is for you. There is no added sugar in this recipe but a whole lot of flavor! I will let this sit overnight in the refrigerator so the flavors can meld together. Tomorrow I am going to make a Ham Pasta Salad and use this in it instead of mayonnaise or Miracle Whip like I usually do. This dressing is also great on your salads.
Ingredients
Combine all of the ingredients in a sealed
container that you can shake.
Shake it really well and refrigerate it overnight.
Shake it again and serve over a lettuce salad or pasta salad.

Ingredients
- 1/4 cup grated Parmesan cheese
- 1/4 cup vegetable oil (or olive oil)
- 2 Tbsp lemon juice
- 2 Tbsp vinegar
- 2 tsp dried parsley
- 1 Tbsp mustard
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1/8 tsp pepper
- 1/8 tsp garlic powder
Directions
- In a container with a lid that can be shaken, add all of the ingredients.
- Shake until completely combined.
- Refrigerate overnight, shake and serve with salad or mixed with pasta

Ok, this is one I have to try. I really can’t have sugar or dairy. However, I can substitute nutritional yeast for the Parmesan cheese and then it becomes vegan. I would also use fresh lemon juice vs bottled lemon juice (but I have lemons on-hand at all times). This looks really good.
Awesome you can even use fresh herbs. If I used 1 tsp dried use 1 Tbsp fresh instead. Thank you Lynn!
oh yea…I have a variety of fresh and dried Just depends on when I make it. I love subbing fresh herbs.
I dehydrate my fresh herbs for winter and when I feel like walking out to the garden I pick them fresh….lol We have 2-1/2 acres and the garden is away from the house.
oh that’s very cool. I have 3 potted plants with mint, basil and thyme. My actual garden was a no go. But, going to compost a bit for next year and try it again.
We do that too. We actually have gigantic volunteer tomato plants growing in the compost from throwing our veggies in there…lol
My sister used to have a compost pile. Then during a hurricane, my son’s pumpkin seeds were deposited there. She was not happy about her compost pile being over taken by HUGE pumpkins. I thought it was hysterical.

Well, he was away in the Army, which made it funnier, because she had to attend the pumpkins too. My son was delighted.

This sounds so good and I wouldn’t have thought to put it over pasta salad! It’s so hot here and I don’t feel like cooking at all when it’s like this but I think I can manage boiling pasta and pour this over it with some veggies 🙂 thanks for this!!

In the pasta salad you could really taste the Parmesan cheese. I love this because there is no added sugar or mayonnaise!
