Blueberry Loaf Cake

My two garden blueberry bushes are giving me an abundance of blueberries this year. I have a freezer full of gallon bags full of them. I thought I would try a new blueberry recipe. Although this looks like bread, it is actually a loaf cake. What a nice touch it was adding the cinnamon sugar topping giving this delicious and moist Blueberry Loaf Cake an extra burst of flavor.

Ingredients

In a large bowl cream the butter

Add the sugar and mix well with a spoon.

Add the eggs, one at a time, mixing

well with a spoon after each egg.

Add the milk and vanilla extract.

Mix well with a spoon.

Add the baking powder to the

flour and whisk together.

Add the flour mixture to

the creamed mixture.

Stir with a spoon just until combined.

Add the blueberries and gently stir.

Grease a 9” x 5” x 3” loaf pan.

Pour the batter into the loaf pan.

Combine the cinnamon and sugar

and sprinkle on top of the batter.

Bake in a preheated 350 degree oven for

50-60 minutes or until a toothpick

inserted in the center comes out clean.

 

Blueberry Loaf Cake

Ingredients

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1-3/4 cups all purpose flour
  • 1 tsp baking powder
  • 1-1/2 cups fresh or frozen blueberries

TOPPING:

  • 2 tsp granulated sugar
  • 1 tsp ground cinnamon

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream butter and sugar together.
  3. Stir in the eggs one at a time stirring well after each addition.
  4. Stir in the milk and vanilla.
  5. Combine the flour and baking powder. Add flour mixture to the cream mixture and stir just until combined.
  6. Gently fold in the blueberries.
  7. Grease a 9” x 5” x 3” loaf pan.
  8. Pour the batter into the greased loaf pan.
  9. Combine the sugar & cinnamon topping and sprinkle over the top of the batter.
  10. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  11. Remove from the pan and cool on a cooling rack. Once completely cool, slice and serve or store in an airtight container. Can be frozen too.

    • Do you put acid on your bushes? Buy a fertilizer that is for blueberries and hydrangeas and follow the directions and I bet next year you will get them. I use Miracid in the growing season and just an acid in the dormant months. In about 25 years of growing the same 2 bushes there was only one year I didn’t get blueberries and that was last year….the flowers were killed off by frost.

  6. received a message from the little mermaid perhaps being looking for all my life but do they exist.? I have had pork chops and creamed mashed potato with steamed cabbage with truffles .Nice old red wine and then homemade baked Alaska washed down with Italian desert pudding wine. Now ready to rest after six hours in water up to waist cleaning water Liliies . One hour with hens cleaning and feeding then an hour cooking .Worn out but wine revived me so rest then collect chicks newborn to house in runs over night with moms. Retired too young but working just as hard even so. Blueberry pie in freezer for dinner tomorrow when I work out waht to cook. Forests here full to brim of mushrooms ta moment so may just go picking as weekend brings the city out here so must have a bucket full tonight before all wil be gone. i need 12 miles of high wire fencing to stop them stealing from my plot. City people think that world outside belongs to them. im a gentleman but must agree one must fence all off or loose and sting. If some one knocked on my door saying if I pick a bucket for myself may i pick a bucket for you Sir. Now that would be civil and agreeable .Pick all you want bring me one bucket full thank you old boy for caring. Hens have more love and trust in me than people have .But then I love my friends, all English here, who I look forward to partying with.

    • I can’t imagine having that many mushrooms! I love mushrooms and they are not cheap here. I would be furious if city people picked any of my produce but I like your idea they pick for you and can have some! You are so active you will live to be at least 100! I love hearing about your day…..thanks!
