Thai Cucumber Salad

After picking over 40 large cucumbers from our garden in just two days I decided to find a new recipe for cucumbers. So I searched and found this wonderful Thai Cucumber Salad. I loved all of the ingredients that were in it and have never tasted cucumbers like this before….absolutely delicious!

Ingredients – optional is crushed peanuts

In a small bowl combine the vinegar, sugar, red pepper flakes,

sesame oil and salt. Stir until the sugar is dissolved and set aside.

Wash and peel the cucumbers. Slice the cucumbers

in half lengthwise then slice into thick slices.

Add the green onions and peanuts (optional).

Pour the vinegar mixture over the top and stir to combine.

Cover and refrigerate until ready to serve. Stir before serving.

 

Thai Cucumber Salad

Ingredients

  • 2/3 cup rice vinegar
  • 4 Tbsp sugar
  • 1 tsp sesame oil
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 4 cucumbers
  • 1/3 cup diced green onion
  • 1/2 cup chopped peanuts, optional

Directions

  1. Mix vinegar, sugar, sesame oil, red pepper flakes and salt in a small bowl until the sugar dissolves then set aside.
  2. Wash and peel the cucumbers.
  3. Cut the cucumbers lengthwise. Cut the halves into thick slices and place into a large bowl.
  4. Add the green onions and peanuts (optional).
  5. Pour the dressing over the cucumbers and stir.
  6. Cover and refrigerate until ready to serve.

  1. The Thai place I go to serves these. However, they are sliced a lot thinner. Also, they don’t come with peanuts, pepper flakes or onions. Of course, as with any Asian dish, there are hundreds of recipes out there. Looks really good though. I love using rice vinegar.

    • My husband picked another 21 today! This is crazy he has been picking over 20 every other day! They don’t fit in the refrigerator anymore. I have been giving them away. I think it’s time to make pickles.

  2. Oh my – that is early for so many cucumbers – we don’t usually have them til mid-to-late August and probably later this year as people sowed seeds later.

    • We have picked over 70 cucumbers! They are in 2 raised beds that are 4’ by 4’ each. It is crazy how many these plants are producing!! We are even getting tomatoes. I have never seen produce like this this early.

  3. Sounds just up my street and will try this as now we too have cucumber long in greenhouses.Last month we had the mound version called ridge cucumber but better from greenhouse for this recipe I think. Thank you again

  4. Ok that’s weird! I just asked Hubby last night to make his delicious Thai cucumber salad! He uses fish sauce instead of sesame oil and lime juice instead of the vinegar with peanut halves–Iove it. Will try your version too, we have cucs like crazy this year.

    • It was an amazing year! Out of 8 plants we made almost 50 quarts of dill pickles, gave some cucumbers away and ate a ton! This was a nice change of taste from my usual recipe and it was relally delicious! Have a great weekend!

      • We had an odd weather year, hopefully odd. Very hot early and wet followed by the same. The only successes were tomatoes and okra. I will pickle okra. Thanks.
