  1. This sounds delicious! My zucchini plant has almost taken over my garden this year and I’ve been looking for new recipes to try. Can’t wait to give this one a go!

  2. I tried something a bit like this recently, except I used tomato paste (a brand that didn’t have a lot of added salt and other flavors), minced garlic, and oil. I didn’t use pepperoni and I didn’t think to add parmesan as well as mozzarella (where was my head?). I did sprinkle it with toasted sesame seed, which sounds odd but I once had a really good pizza primavera with sesame seed sprinkled on it. I didn’t try scraping the zucchinis out, but that might have helped me get the sauce to stay on. Maybe next time.

    • Oh yes scraping out the zucchini is what gives it the boat name and you can fill it with even more ingredients. I love this because you can put whatever you want in the middle. There are so many possibilities and I’m sure yours was just as delicious!
