Italian Pasta Salad with Shrimp
Here is a great salad for your Fourth of July celebration. I always look forward to the fresh garden vegetables in the summer. Italian Pasta Salad with Shrimp is a great way to use some of those fresh vegetables. If you don’t want to use shrimp, just leave it out. You can get everything prepped and then mix it together a few hours before you are ready to serve it. I have included my link for homemade Italian Salad Dressing Mix below but any Italian Dressing will work.

Ingredients
Gently toss all of the ingredients into a large bowl until combined.
Refrigerate for at least a few hours and until cold, then serve.
Italian Pasta Salad with Shrimp

Ingredients
- 1# pasta, cooked according to package directions
- 1 can black olives, each olive cut in half
- 1 small head of broccoli, discard the stalk and cut the broccoli top into small pieces
- 1 # cooked shrimp, cut each shrimp in half
- 1 medium cucumber, cut into small chunks
- 4 oz sliced pepperoni, cut each piece in half
- 1/4 cup grated parmesan cheese
- 2 cups Italian salad dressing, prepared
Directions
- In a large bowl, gently combine all of the ingredients.
- Cover and refrigerate at least a few hours or until cold.
