Fresh Cucumber Salad
My husband just picked our first cucumber from the garden. This Fresh Cucumber Salad has a delicious sweet and sour taste that I just love. I have made this salad for years. You can make this recipe in a matter of minutes, let it sit overnight and you will have an amazing salad to serve guests, as a meal or as a snack. I could eat cucumbers every day!

Ingredients
Put the sliced cucumbers in a small bowl.
In a small cup combine all of the rest of the ingredients.
Stir until the sugar is completely dissolved.
Pour over the cucumbers and toss.
Cover and refrigerate overnight, stirring occasionally.

- 1/3 cup sugar
- 4 Tbsp water
- 4 Tbsp white vinegar
- 1 Tbsp fresh parsley, chopped
- 1/8 tsp celery seed
Directions
- Place the cucumber slices in a small bowl.
- In another small bowl combine the rest of the ingredients and stir until the sugar is dissolved.
- Pour the liquid mixture over the cucumbers and toss.
- Cover and refrigerate over night stirring occasionally.

I love cucumber salad. I have been making this for over 30 years (learned as a teen). I add dill instead of and a bit of salt for seasoning and of course the sugar and white vinegar. I have recently started adding thinly sliced red onion for additional flavor. I eat this all summer long. It’s so refreshing!

Cukes are great. They do help keep you cooler too. I will juice them as well. Very refreshing.

Yup. That’s one option. I will also juice it with carrots and apples. Just depends on my mood.

My mom would make this and set it on the table while she made dinner. We’d nibble at it and there was not always much left for dinner.

My mom made something to this affect, but also added raw sliced sweet onion (no Vidallia back then) and/or tomato. Now that I think about it, I believe she used dill instead of celery seed.

Yes they do give us wonderful memories. I have read before that the smell of food baking or cooking can invoke memories from childhood of a favorite food that you enjoyed but have not thought about in years. During cucumber season when you buy cukes for a song, it seemed we had them every night, just as you prepared them. Very occasionally my mom would prepare them in sour cream, but mostly like your recipe – less fattening.

My husbands favorite is creamed cucumbers. He cuts the cucumbers and adds Miracle Whip mixed a little milk. For me, a little salt and a fork..hahahaha

Great cant wait for try.Here my toms and cucumbers at least another two weeks off harvest the first ones.Big greenhouses but Spring was late this year. Now over 100f daily up to 116 one day last week..Soon as we can shall try your salad idea.
Wow I could never stand that kind of heat. It is in the 90’s here and my air conditioner is set at 69 degrees F in my house. When you make the liquid part, adjust the sugar to your own taste. If you don’t like sweet I would cut it back to 1/4 cup.
It takes time but mad dogs and English men fear not the noon day sun. Old song but perfectly simply me. I hate winters to me, death to the gardens and time to research truth for blogs. Being aristocrates what is fear anyway just embrace it and shock it that way. Death only comes once so live the dream. After that live it again and again.

Looks so refreshing and tasty. I love eating cucumbers with some salt,black pepper and lime juice sprinkled over it .Never had this way.
