Fettuccine Alfredo with Sausage

When I make this Fettuccine Alfredo with Sausage, I use my Fried Sage Leaves in the recipe. (Link for Fried Sage Leaves is below) If you don’t have fresh sage leaves you could substitute fresh spinach leaves instead. Either one you use, this will turn out fabulous! I also used Hot Italian Sausage links and took the casing off. That way the sausage stayed in chunks.

Ingredients – (olive oil is for

frying the sage leaves)

In a large pot cook Fettuccine according

to the package directions.

Drain the pasta and put it back into the

hot pot with a lid to keep warm.

Cut the sausage links into pieces and

remove the casing.

In a large frying pan cook the sausage

over medium heat until no longer pink

inside and drain grease.

Add the cream, garlic, salt and pepper

to the sausage. Bring to a boil over

medium heat.

Pour the sausage and cream into the pasta.

Toss pasta until combined.

Add the sage leaves and Parmesan cheese.

Fettuccine Alfredo with Sausage

Ingredients

  • 1# fettuccine
  • 1# hot sausage links (or mild)
  • about 24 fried sage leaves, (http://indianeskitchen.com/2018/06/23/fried-sage-leaves) or use 24 spinach leaves
  • 1/4 tsp dried minced garlic
  • 2 cups heavy cream
  • kosher salt to taste
  • pepper to taste
  • 1 cup freshly grated Parmesan cheese

Directions

  1. In a large pot cook the fettuccine according to the package directions.
  2. Drain the pasta and put it back into the hot pot with a lid to keep warm.
  3. Cut the sausage links into pieces and remove the casing.
  4. In a large frying pan cook the sausage over medium heat until no more pink remains then drain the grease.
  5. Add the cream, garlic, salt and pepper to the sausage.
  6. Bring to a boil over medium.
  7. Pour the sausage and cream mixture into the pasta and toss to combine.
  8. Add the cooked sage and Parmesan cheese.
  9. Toss until the cheese is melted.
  10. Place on plates and serve.
