Refrigerator Strawberry Jam

There is nothing better than a toasted English Muffin topped with homemade Strawberry Jam! It is so easy to make Refrigerator Strawberry Jam and takes very little time. It is practically fool-proof so any level of cook can make this! Keep in mind, this is not canned so the consistency isn’t as thick and it won’t last in the refrigerator as long, only about 2 weeks. It will be gone before that in my house! The taste, however, is as delicious as any other jam.

Ingredients

Using a pastry blender, potato masher or fork crush the strawberries.

Pour the mashed strawberries into a medium

saucepan and add the sugar, pectin and lemon juice.

Adjust the sugar to the level of sweetness you desire.

Stir the mixture and cook over medium heat until the mixture comes to a boil .

Continue cooking until thickened, about 5 minutes.

Let it sit on the counter until the jam cools some then

pour it into a heatproof glass jar with a lid.

Store in the refrigerator.

Ingredients

  • 1# fresh ripe strawberries, cleaned with the tops cut off
  • 2/3 – 1 cup granulated sugar, add sugar to your taste
  • 2 Tbsp. powdered fruit Pectin
  • 2 tsp lemon juice

Directions

  1. Using a pastry blender, potato masher or fork crush the strawberries.
  2. Pour the mashed strawberries into a medium saucepan and add the sugar, pectin and lemon juice. Adjust the sugar to your own taste.
  3. Stir and cook over medium heat until the mixture comes to a boil. Continue cooking and stirring until thickened, about 5 minutes.
  4. Let the pan sit on the counter on a cooling rack until it cools some.
  5. Pour the Strawberry Jam into a heatproof glass jar with a lid.
  6. Serve over your favorite bread.
  7. Refrigerate for up to 2 weeks.

      • That’s a perfect way to do it Diane. Landscapers say that you are supposed to do that with your perennials as well, so there is always color in your yard during the growing season.

  1. I used to make this with my kids when they were younger and then they gave jars to their teachers and bus driver. I don’t make it any more because we don’t eat a lot of jam.

    • What a nice gift for the teachers! I canned it when my kids were young as well. I stopped when they moved out and now the grandkids are here from Thursday night through Sunday night while their mom works so I am bringing back a lot of the recipes I use to make. Peanut butter is a staple in our house once again…hahaha
