I waited all winter to make a batch of Compound Butter using the fresh herbs from my garden. Yesterday I cut my first batch of herbs. If you have never tried Compound Butter you are missing out! I decided to use my fresh thyme, sage and parsley mixed with butter to get this wonderful Compound Butter. Any combination of your favorite herbs can be used so don’t be afraid to experiment!

What do you do with Compound Butter you ask? Slice off some pieces and use it to tuck under the skin of a whole chicken, put it on top of hot vegetables, melt it over your fish/shrimp or just spread it on a piece of bread. The possibilities are endless and the flavor of this butter will make whatever you use it on taste fantastic!

  1. Ok this is very cool as I’ve always wondered what compound butter is but never put forth any effort to find out. Now I understand it and have a recipe to make it 🙂

    • Parsley will add flavor but not a lot alone. If you can get another couple of your favorite herbs it will taste even better. I hope you love it as much as I do!

  2. I envy you with your big garden. Shopping for all our produce in a supermarket where everything is always available means we’ve lost the joy of waiting for seasonal produce. I remember mums excitement has she checked the tomatoes at the beginning of summer for ripeness, and those first herbs in spring. Eating seasonally gives so much more joy to food.

  3. I’ll have to try this one! I love compound butters, my favorite is garlic-rosemary but another good one is dill-chive.
