Compound Butter
I waited all winter to make a batch of Compound Butter using the fresh herbs from my garden. Yesterday I cut my first batch of herbs. If you have never tried Compound Butter you are missing out! I decided to use my fresh thyme, sage and parsley mixed with butter to get this wonderful Compound Butter. Any combination of your favorite herbs can be used so don’t be afraid to experiment!
What do you do with Compound Butter you ask? Slice off some pieces and use it to tuck under the skin of a whole chicken, put it on top of hot vegetables, melt it over your fish/shrimp or just spread it on a piece of bread. The possibilities are endless and the flavor of this butter will make whatever you use it on taste fantastic!
Ingredients
In a medium bowl, using the back of a spoon, cream the butter.
Add the herbs.
Using the back of the spoon, mix the herbs into the butter.
Lay a piece of plastic wrap out flat and place the
compound butter onto it in the shape of a log.
Seal the butter in the plastic wrap and refrigerate
for 2 hours or until the butter is firm.
Slice it into pieces when the butter is cold and
firm then use it on your favorite foods.

- 2 sticks butter – softened
- 1 Tbsp fresh thyme – rinsed & stem removed
- 1 Tbsp fresh sage – rinsed, stem removed and torn into small pieces
- 1 Tbsp fresh parsley – rinsed, stem removed and torn into small pieces
Directions
- Put the butter in a small bowl.

- Lay a piece of plastic wrap on the counter.
- Place the Compound Butter on the plastic wrap and form a log. Seal the butter in the plastic wrap.
- Refrigerate for 2 hours or until butter is firm.
- Slice off the amount you need and use it on chicken, fish, shrimp, vegetables, bread or whatever you wish to add more flavor to.

We also freeze ours. It’s great to have in the freezer, for use in the dead of winter when fresh herbs are hard to come by! 🙂

It works beautifully! We tend to wrap it in plastic wrap tightly and then place that in a freezer bag.

I never heard of compound butter. But I have a whole crop full of parsley in my garden to try with this. Sounds great!!
Parsley will add flavor but not a lot alone. If you can get another couple of your favorite herbs it will taste even better. I hope you love it as much as I do!
I envy you with your big garden. Shopping for all our produce in a supermarket where everything is always available means we’ve lost the joy of waiting for seasonal produce. I remember mums excitement has she checked the tomatoes at the beginning of summer for ripeness, and those first herbs in spring. Eating seasonally gives so much more joy to food.
It’s nice to have somebody else appreciate the effort that goes into a garden! It is a labor of love!

I’ll have to try this one! I love compound butters, my favorite is garlic-rosemary but another good one is dill-chive.
That is what is nice about homemade, you can make any flavors you want. It is so good added to so many different kinds of food.
