Oven Potato Kabobs

When you hear the word Kabobs, you don’t usually think Potato! These Oven Potato Kabobs not only look elegant but taste amazing too! I snipped the ends off some of my home grown thyme to add even more flavor to these delicious Oven Potato Kabobs. What makes these so good is what you do to them before they go into the oven.

Ingredients

Soak wooden skewers in water for at least 30 minutes.

Wash the potatoes and cut them into 1” pieces.

Put cut potatoes into a medium bowl and add 2 Tbsp of water to the bowl.

Microwave for 4 minutes on high and then stir.

Microwave 3 minutes more.

Let cool until you can pick up the pieces with your hand.

(If you prefer, you can parboil the potato pieces instead

in a saucepan of boiling water for 5-10 minutes until almost tender.)

Thread the potato pieces onto the water-soaked

wood skewers and place on a baking sheet.

Mix the melted butter and olive oil together then brush on the top of the kabobs.

Turn them over and brush on the other side too.

Sprinkle both sides with the salt and pepper then put the fresh thyme on top.

Bake in a preheated 475 degree oven for 20-25 minutes then serve.

 

Oven Potato Kabobs

Ingredients

  • 1# potatoes (about 3 medium)
  • 2 Tbsp butter, melted
  • 2 Tbsp olive oil
  • Fresh snipped thyme ends
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp water
  • 8 – 6″ wooden skewers

Directions

  1. Preheat oven to 475 degrees.
  2. Soak wooden skewers in water for at least 30 minutes.
  3. Wash the potatoes and cut into 1” pieces, leaving the skin on.
  4. Place potatoes and water into a medium microwave safe bowl. Microwave on high for 4 minutes, stir and microwave 3 more minutes. Let cool until you can pick them up with your hand.
  5. Thread the potato pieces onto the water-soaked wooden skewers and place them on a baking sheet.
  6. Combine the butter and olive oil and brush on top of the kabobs. Turn kabobs over and brush the other side.
  7. Sprinkle both sides with the salt and pepper then put fresh thyme on top.
  8. Bake for 20 – 25 minutes then serve.

  1. Thank you ill try that soon. Just made pastry for Cumberland sausage rolls .Just wrap the pastry around once to join up crimp and roll and into hot oven.Nothing else needed save a glass of something as they cook.Big flakey pastry butter sweet and all those juices .More like a cross between a British pork pie and a sausage roll. One is never enough when you taste that juicy bite have the plate under or it runs down your chin. Learned this in China Hong Kong way back in 1970 when a girl I knew had no way of making it I rolled up army sausage in her pastry and flung into the oven as I was half starved watching her cut up veg for the men in her house . By the time her pork and veg with rice came off I had eaten a whole meal. From then on it became Chinese dish with sweet and sour sauce. ill have a cook up with your recipe though.Thanks for your replies dear Diane God loves us all for trying

    • Oh my does that sound delicious! Sausage is one of my favorite things to eat. I like the the glass of something as they cook too!   2. Sounds pretty good. I have a thyme plant. I had a rosemary one, but managed to kill it somehow. I would probably sprinkle paprika on those too. LOVE that spice and its color. Might have to make these soon.

  3. I JUST saw those pink flower plates at the store and almost bought them. They’re so pretty, but I couldn’t justify the need. Glad to see you have them! 🙂

    • That is funny you ask because I was thinking the same thing when I was making them. If I did it I think I would put foil down and brush the butter/oil on and then the rest. I think they would turn out great!
