Baked Kielbasa with Potatoes
If you want to make a delicious, simple and hearty meat and potato meal, this is it! It is made with olive oil and it is baked. However, you would never guess by the taste that this is a healthier meal than most.
Ingredients
Spray a large heavy cooking sheet with cooking spray.
Slice the Kielbasa into 1/4” pieces. Put them into a large bowl.
Cut the potatoes into 1″ cubes and place them into the bowl.
Add the rest of the ingredients on top of the potatoes.
Mix well until all of the potatoes and Kielbasa are coated.
Place the mixture onto the cooking sheet in a single layer and
bake in a preheated 400 degree oven for 30-45 minutes
or until the potatoes are tender, stirring after 20 minutes.
Remove from the oven and use a spatula to gently toss.
Serve hot!

- 14 oz Kielbasa sausage
- 6 medium potatoes
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
- 1/2 tsp oregano
- 1/4 tsp onion powder (or you can add onion pieces]
- 1/2 tsp paprika
- 4 Tbsp. olive oil
Directions
- Preheat the oven to 400 degrees.
- Spray a large heavy cooking sheet with cooking spray.
- Slice the Kielbasa into 1/4″ pieces then place them into a large bowl.
- Cut the potatoes into 1″ cubes and put them in the bowl.
- Add all the rest of the ingredients on top of the potatoes and mix well coating all of the potatoes and Kielbasa.
- Place the mixture in a single layer onto the prepared cooking sheet.
- Bake for 30-45 minutes or until the potatoes are tender, stirring after 20 minutes.
- Remove from the oven and using a spatula, toss.
- Serve hot!

Oh believe me I wanted to! But my grandkids were over and they won’t touch it with onions so I always use onion powder and they don’t know the difference….lol
