Rice with Broccoli, Ham & Cheese
This recipe is a good stick to your ribs kind of meal. It is a complete meal and can be made with either cream of mushroom soup or cream of chicken soup. I personally like the cream of chicken soup best but my husband likes the cream of mushroom soup. I switch back and forth between the two different soups for a completely different taste so it’s like a different meal each time.
Ingredients
Preheat the oven to 375 degrees.
Spray a 4 quart casserole dish with cooking spray.
Add the cream of mushroom soup and rice, mix well.
Add the pepper & salt and mix well.
Add the ham and broccoli and mix well.
Slowly add the water mixing well after every half cup.
Bake for 45 minutes with a lid. Remove the casserole dish
from the oven and stir, scraping the bottom of the casserole dish.
Return to the oven with a lid and cook an additional
15 minutes or until the rice is tender.
Remove from the oven and spread the cheese evenly over the top.
Put it back in the oven, without the lid, until the cheese melts.
Remove from the oven and place in a serving dish and serve.

Ingredients
- 2 – 10.5 oz cans of either cream of mushroom soup OR cream of chicken soup
- 3 cups hot tap water
- 1 & 1/2 cups long grain white rice
- 1/2 tsp salt (optional)
- 1/2 tsp pepper
- 1 cup cooked ham cut into small chunks
- 1 cup frozen broccoli
- 1 cup shredded cheddar cheese, or your favorite
Directions
- Preheat oven to 375 degrees.
- Spray a four quart oven safe casserole dish with cooking spray.
- Add the cream of mushroom soup (or cream of chicken soup) to the casserole dish. Add the rice and stir well.
- Add the salt and pepper, mix well.
- Add the ham and broccoli, mix well.
- Slowly add the hot water about 1/2 cup at a time stirring well each time.
- Put a lid on and bake for 45 minutes. Remove from the oven and stir, scraping the bottom.
- Continue cooking, with the lid, for another 15 minutes or until the rice is the desired tenderness.
- Remove from the oven and spread the cheese evenly over the top.
- Put it back into the oven, uncovered, until the cheese is melted.
- Place on serving plates and serve.
