Roasted Red Pepper Gnocchi Soup

Roasted red peppers, spinach, Parmesan cheese and gnocchi in a creamy broth. I am eating out with a client tonight and I am definitely going to be on my husbands good side because I don’t eat peppers so I made this entirely for him! I rarely make anything for him with peppers!

Ingredients

Cook the Gnocchi according to the package directions.

Drain and set aside.

In a frying pan melt the butter, add the onions

and garlic cooking until tender.

Add the already roasted red peppers.

Put the onion mixture into a food processor (I used my
emulsion blender) and blend to your desired smoothness.

Pour it into a pan and add the chicken broth and pepper.

Stir and cook over medium heat until hot and then add the cream.

 

Stir and add the spinach, cooking until the spinach is wilted.

Add the cheese and stir.

 

Add the drained gnocchi, stir and serve.

Ingredients

  • 16 oz gnocchi
  • 3 Tbsp. butter
  • 1 small onion, diced
  • 3 cloves garlic, diced
  • 2 large roasted red peppers, I bought a jar of already roasted peppers
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated parmesan cheese
  • 1/4 tsp pepper

Directions

  1. Cook gnocchi according to package directions drain and set aside.
  2. In a frying pan over medium heat melt the butter, add the onions and garlic cooking until tender.
  3. Add the roasted peppers.
  4. Put the onion mixture into a food processor, I used an emulsion blender, blending to your desired smoothness.
  5. Pour into a large pan. Add the chicken broth and pepper.
  6. Stir and cook a few minutes just until hot then add the cream.
  7. Stir and add the spinach, cooking until the spinach is wilted.
  8. Add the cheese and stir.
  9. Add the cooked and drained gnocchi, stir and serve.

  1. This sounds SO good! Love anything with gnocchi and creamy sauces. My husband doesn’t like spinach unless I can conceal it enough with other flavors in a recipe, this sounds like it might do that. Bookmarking this one, thank you!
