Slow Cooker Roast With Vegetables


Spring is here and so is the yard work! We have 2-1/2 acres and when I work outside for hours, like today, I usually can’t move afterwards. I prepared for the down time by making dinner early in the morning in the slow cooker. That way all I had to do is cut the meat and put everything on the plates.

I love to make a roast in the slow cooker, the meat just falls apart and it makes the best gravy! I didn’t make gravy with it today but I will be saving the juice! I cooked the carrots, potatoes and onion at the same time as the roast so my entire meal was ready to serve with no added work.

We usually have leftover beef so I save the juice, shred the leftovers and make shredded beef sandwiches for another day. Two meals in one!





In a small bowl combine the paprika, chili powder,

salt, cayenne pepper and garlic powder.


Rub the mix all over the roast. Pour the beef broth into the slow cooker.

Place the roast into the slow cooker with the beef broth.



Place the potatoes and carrots into the slow cooker around the roast.



Salt and pepper the potatoes and carrots only.



Place the onions all over the roast, carrots and potatoes.



Cook on low for 8-10 hours then place on serving plates and serve.

If you wish, you can make gravy with the juice in the slow cooker.


Slow Cooker Roast With Vegetables



  • 1 – rump roast (3-5#)
  • 1 Tbsp. paprika
  • 2 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1 – 14 oz can beef broth
  • 4-6 potatoes, peeled
  • 6-8 carrots, peeled and cut in half
  • 1 medium onion, peeled and sliced
  • salt & pepper (to taste) for the vegetables


  1. In a small bowl combine the paprika, chili powder, salt, cayenne pepper and garlic powder.
  2. Rub the mixture all over the roast.
  3. Pour the beef broth into the slow cooker and then place the roast in too.
  4. Place the potatoes and carrots around the roast.
  5. Sprinkle salt and pepper over the vegetables only.
  6. Spread the sliced onions evenly over top of the roast and vegetables.
  7. Cook on low, covered, for 8-10 hours.
  8. Gravy can be made with the juices in the slow cooker when it’s finished cooking.



  1. I love my slow cooker. Some are better than others though. My previous slow cooker didn’t seal properly and really boiled everything quite violently. The best thing about Slow cookers – they’re easier to clean than the oven. (Spring is long over here – autumn well underway.)
