How Fresh Are Your Eggs?

It is that time of the year that most of us will be hard boiling eggs and coloring them for Easter. It is a known fact that fresh eggs do not peel easily. I always buy my eggs two weeks in advance so that they will peel easily.

Eggs have a small air pocket inside them at the large end of the egg. As the egg gets older the air pocket gets larger. The larger air pocket in the older raw egg is why it is easier to peel the egg when it is hard boiled.

Eggs from the store should always be stored in the refrigerator. Eggs usually last about 4-5 weeks after they are packaged. The egg cartoon should have the use by date on the carton. But what if it’s not there or you can’t read the date? Then go ahead and do the float test.

The float test is very simple. Fill a glass about 3/4 full with water and carefully place the egg in the water. If the egg lies on the bottom of the glass horizontally, it is very fresh. If the egg is still on the bottom but vertical it is still fresh. Once the egg leaves the bottom of the glass it begins to be not as fresh. If the egg floats at the top of the water it is not fresh and should not be used.

Keep in mind that this is not a guaranteed method of freshness. If you have any doubt if your eggs are safe or not, throw them out!

  1. I knew about the water… But did not know about your other tips! Very useful to know especially if I’m trying to peel an egg And I can’t at least it’s super fresh!
