Golumpki Soup

What is Golumpki Soup you ask? Golumpki Soup it is a cabbage roll soup that is so easy to prepare! You don’t have to make the actual cabbage rolls because everything from the cabbage rolls is in there. All that wonderful taste with very little effort!

Ingredients

In a large pan over medium heat,

cook the ground beef and onion until

the ground beef is no longer pink.

Add the cabbage and cook another

4 minutes stirring occasionally.

Add the rest of the ingredients, except

for the rice, and stir to combine.

Bring to a boil and then turn the heat

to a low boil. Cover and continue to low

boil for 15 minutes, stirring frequently.

Add the rice and stir.

Continue cooking, covered, another

30 minutes stirring frequently.

Place into a serving bowl and enjoy!

Ingredients

  • 1# ground beef
  • 1 regular head of cabbage, chopped into small pieces
  • 1 large onion, diced
  • 28 oz crushed tomatoes
  • 28 oz beef broth
  • 1 cup water
  • 2 Tbsp. light brown sugar (optional)
  • 1 Tbsp. lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup uncooked long grain rice

Directions

  1. In a large pan over medium heat, cook the ground beef and onion until the ground beef is cooked through and no longer pink. Add the cabbage and cook for 4 minutes stirring frequently.
  2. Add the rest of the ingredients, except for the rice, stirring to combine.
  3. Bring to a boil stirring frequently.
  4. Reduce heat to a low boil, cover and cook for 15 minutes.
  5. Add the rice, stir and cook another 30 minutes on a low boil, stirring frequently.
  6. Ladle into a serving bowl and enjoy!

  1. Diane, when I saw this on your FB page first, I thought you attempted to make Gołąbki and they fell apart, so you made soup! I love stuffed cabbage, and Gołąbki (polish name) is one of my favorite dishes around holidays or during winter season.

    • My daughter in laws parents came over on the boat from Poland. My son gets so much Polish food from them all the time! The name Golumpki, Pigs in a Blanket and Halupki are all used in our area. The original name Golabki (and correct name) has been changed for who knows why…lol Either way you fix them, they are delicious!!! Thanks for a good laugh about them falling apart. I had to share that with my husband!

  2. What a great way to get a good cabbage fix. It’s so good for us, and since it became fashionable to only steam it lightly it’s gone into decline in traditional English style cooking. Such a shame….

  3. I make cabbage roll casserole, but have never tried soup. I think I will make this for our soup dinner during lent for the church. Sounds easy and yummy. How many a mall bowls would you say this makes Diane?

  4. Looks fabulous! We are fortunate to have a good source of organic tomatoes here, so they would probably replace the peeled ones, but this may well be my next crock pot project.

    • I just finished the last bowl for lunch! It tastes delicious but keep in mind I like brown sugar in mine. If you don’t like a sweet taste, just leave the sugar out. It will still taste great!

  7. Hello Diane, I have just begun a blog on cooking for one. I am Old, single, on a pension and I have no freezer so I look for recipes that don’t require a lot of keeping.     I love this because it fits my requisites. It is easy, nutritious and if I cut the quantities down it is good for a single old man to make and keep for a while without freezing.

  10. I was thinking of making a tomato soup today as I have a few tomatoes that need using up. I also have 1/2 a cabbage in the fridge, and some good home made beef stock. This looks like the perfect way to put it all together. I don’t have any ground beef, but I’m sure a bit of chopped bacon will suffice. Great idea adding the cabbage.

      • I made it for lunch yesterday. It was really yummie, that’s one that’s sure to be repeated Diane. I’m getting into making my own bone broth and am trying to consume a cup of it at least every day. Soups are a great way to make sure I do. Loved the cabbage in it.

      • I’m not freezing it at the moment Diane, as I’m getting through it pretty quickly. I make a batch every 3-4 days, alternating between beef and chicken. Eventually I’ll probably freeze some.

  12. I recently made stuffed cabbage and had a few rolls that refused to stay rolled. I took them and chopped them up and added broth. Who knew that was a recipe😂

    • Thank you for bringing it to my attention that I needed to put uncooked rice on the recipe card. The rice is raw and cooks in the soup for 30 minutes, it’s step 5 in the directions on the recipe card. Enjoy Lynne this is one of my favorites!
