Banana Pudding

How many times do you have bananas that are getting brown spots and you don’t want to eat them? They are actually at their peak of flavor at this point. Of course you could whip up the usual banana bread, but the next time try this Banana Pudding for a change of pace. It is quick and easy to make and definitely delicious.

Ingredients – Although they are turning

black, see the picture below as they were still solid.

Slice four banana’s fairly thick and place them in a bowl.

In a medium pan, whisk the eggs.

Add the sugar and whisk until the sugar dissolves.

Add the salt, cornstarch and milk whisking until combined.

Cook over medium heat, stirring constantly until the mixtures boils.

Continue to cook and stir until the mixture thickens.

Remove from the heat and stir in the vanilla.

Pour the pudding over the banana slices

and stir coating all of the banana pieces.

Cover and refrigerate until cold then serve.

Ingredients

3 eggs

1 cup sugar

1/8 tsp salt

2 Tbl cornstarch

2 cups whole milk

1 tsp vanilla

4 ripe bananas

Directions

Slice banana’s fairly thick and put them into a medium bowl.

In a medium pan, whisk the eggs. Add the sugar and whisk until sugar dissolves.

Add the salt, cornstarch and milk whisking until combined.

Cook over medium heat, stirring constantly, until mixture boils.

Continue to cook until mixture thickens.

Remove from the heat and stir in the vanilla.

Pour over the banana slices and using a spatula, mix until all of the banana slices are covered completely.

Refrigerate until cold then serve.

  1. Never thought of banana pudding and I love bananas often have over ripe ones around that I tend to freeze for later use. This sounds really good to try instead.

    • Yes it was really delicious! But plan on eating it quickly. I was still enjoying mine the next day but not sure if it would have lasted another day had I not eaten it all…lol
