Rosemary-Thyme Chicken with Red Potatoes
I love using my freshly dehydrated herbs from our garden to make my dinners. I also think rosemary and thyme make a great combination of flavor, especially on chicken. This Rosemary-Thyme Chicken with Red Potatoes is baked and you can use either boneless thighs or boneless breast meat.
Ingredients
In a large bowl combine the oil and all of the seasonings.
Place the potatoes and chicken into the bowl
and toss them coating them with the mixture.
Spray a 9”x 13” pan with cooking spray.
Place the chicken and potatoes into the pan.
Cover the pan tightly with foil.
Bake in a preheated 425 degree oven for about 45 minutes
or until the chicken is 165 degrees at the thickest part.

I love roasted potatoes and chicken. I am jealous that you can grow your own herbs, however. I tried but nothing seems to last for me in the desert heat.
Oh yes they don’t do well in the heat. Do you have air conditioning in your home? I have grown them in my home under a grow light in the winter here.
With temps over 100F in the summer, I couldn’t live without AC, but somehow I am not convinced anything would grow indoors as good.
Nice recipe
Thanks Mistimaan
So yummy! I love these kind of dishes: everything in one casserole, in the oven, 40 minutes later ready. Simple and extremely tasty 🙂
Thanks Karen I agree completely!
Looks really tasty Diane.
I really like your step by step photos – they make the process so clear, it’s a great idea.
Thank you I try to keep my recipes easy for the new cooks as well as the seasoned cooks!
This is some purdy chicken Diane! Really looks delicious – I do love rosemary 🙂
Rosemary and thyme are such a yummy combination of flavours for chicken, the whole dish sounds like something we would prepare for a weekend dinner with the family 😀
Thank you Chef!
