Honey Lemon Shrimp Salad

If you love lemon then you have to taste this Honey Lemon Shrimp Salad! This is made with a homemade Honey Lemon salad dressing with an amazing flavor! This can be made in just a few minutes and makes enough for a couple of salads. It was a very refreshing salad and delicious!

 

Ingredients

To make your salad, use whatever ingredients you like on your salad.

I kept it simple with just Romaine lettuce, grape tomatoes,

shrimp, cheese and lemon slices.

To make the salad dressing, whisk all of the

ingredients into a bowl except for the olive oil.

Then add the olive oil.

Whisk ingredients together until it all comes together.

Pour salad dressing over the salad and dig in!

 

Honey Lemon Shrimp Salad

Ingredients

SALAD:

Romaine lettuce

8 grape tomatoes

10 small cooked cold shrimp (not salad shrimp)

1/4 cup shredded cheddar cheese

2 lemon slices

DRESSING:

1 Tbl plus 2 tsp lemon juice

1 tsp finely grated lemon zest

1 Tbl honey

1/2 tsp chopped fresh thyme (or 1/4 tsp dried thyme)

1/4 cup olive oil

Kosher salt or Himalayan salt, to taste

pepper, to taste

Directions

In a small bowl whisk lemon juice, lemon zest, honey and thyme.

Add olive oil to the bowl and whisk until it all comes together.

Drizzle salad dressing over the salad.

Salt & pepper to taste and serve.

  1. I’ve been on a lemon kick lately, so this looks particularly magical to the lemon craving taste buds!

    About to make some ginger lemon granola, so I’ll have to set aside some lemon juice and make this for lunch (as I only use the peel for the granola). I don’t have the shrimp on hand but imagine this will be good even without!
