Caprese Tomatoes

Tomato with Basil & Mozzarella Cheese is an amazing combination. My husband and I usually like food fixed the same way but this is one we like differently. He likes this just like the picture shows, not cooked. Me on the other hand, I prefer mine cooked in the oven where the tomato is warm and the cheese is melted. So I will leave it up to you how you would like to fix yours. The recipe is the same either way other than mine goes into the oven.

Ingredients

Including olive oil to drizzle on top.

Spray a foil covered baking

sheet with olive oil.

Place tomato slices on the pan.

Salt and pepper to taste.

Sprinkle a thin layer of oregano

onto each tomato slice.

Place a piece of fresh mozzarella cheese

on top of each tomato. Sprinkle fresh basil

pieces on top. Drizzle with a little olive oil.

At this point you can go ahead and eat

these, like my husband does or…..

In a preheated 400 degree oven bake for

10 minutes until the cheese melts.

Place on a serving plate and serve hot.

Ingredients

  • 2 – 3 large tomatoes, sliced about 1/4” thick
  • salt and pepper to taste
  • 1/2 tsp dried oregano
  • 1 cup fresh mozzarella cheese
  • 3 sprigs fresh basil, chopped
  • olive oil

Directions

  1. Spray a foil covered baking sheet with olive oil.
  2. Place sliced tomatoes on the pan.
  3. Sprinkle tomatoes with salt, pepper and oregano.
  4. Top with cheese and basil then drizzle with olive oil.
  5. You can eat them now or continue on if you want them warm and the cheese melted.
  6. Bake in a preheated 400 degree oven for 10 minutes until the cheese melts and serve warm.

  2. A remnant from our working life is to have only finger food on Friday nights – no knives and forks allowed. We usuallly still try and add some veg or salad ingredients in finger food style to make it a balanced meal. This looks like an ideal addition.

  3. I’ve been craving slices of fresh tomato but this time of year the tomatoes are so disappointing in the grocery stores. Your post fed my craving, I might have to give in and buy some any way. I’d like mine cold, I must ask hubby if he wants his heated!

  5. I love the combination of warm tomatoes and cheese. I can’t remember ever topping the tomatoes with mozzarella cheese, though. I will certainly be trying this recipe.

    • Warm tomatoes are the best. I love when I make canned stewed tomatoes and there is some left that won’t fill a Mason jar. I get a spoon and eat it!

    • I honestly have never tried fresh mozzarella cold. I didn’t know anyone ate it cold until my husband said he would have liked them better if I hadn’t melted the cheese. I looked at him like he was nuts..hahahaha
