Okra with Corn & Tomatoes
While I was looking in my freezer today I found a bag of Okra that I had frozen in the fall, fresh from our garden. I wasn’t sure what I wanted to make with it when my husband said he saw cans of this vegetable mixture of corn, tomatoes and okra at the grocery store and it looked good. I had all of the ingredients to make it and I always have cooked and crumbled bacon in my freezer so I thought I would give it a try. I have never tried this combination before and I loved it! I have developed a love of Okra ever since we started growing it in our garden. I am finding I am liking southern recipes more and more as I get older.
Ingredients
In a large frying pan cook the diced onion over medium
heat in 1 Tbl bacon grease until tender.
Add all the rest of the ingredients except for the bacon.
Stir and cook over medium heat until it boils.
Turn to low and simmer with a lid for 6-8 minutes or until the okra is tender.
Place in a serving bowl and serve hot.

Ingredients
4 slices bacon, cooked and crumbled (reserving 1 Tbl grease)
1 medium onion coarsely chopped
28 oz can diced tomatoes
2 – 15 oz cans corn, drained
2-1/2 cups frozen cut okra
1 tsp seasoned salt
1/4 tsp garlic powder
1/2 tsp hot pepper sauce
Directions
In a large skillet over medium heat, add bacon grease. Add onion and cook until tender.
Add all the rest of the ingredients except for the bacon. Mix well.
Heat until boiling. Turn to a simmer and cook 6-8 minutes covered or until okra is tender.
Sprinkle with the bacon pieces and serve.

Looks great and as a southerner I can tell you it’s a tasty combination. I don’t have this often because I have a weakness for fried okra. However since I’m going to be adding more vegetables this year I’ll be having this more frequently.

I’m a big fan of okra but never tried it with corn. It looks so good. I hope to try it soon. 🙂

In Diane’s Kitchen: She has a recipe for those of us who only eat breaded fried okra because we don’t like boiled okra. It is mouthwatering to look at. I’ve known of okra and tomatoes and eaten them on occasion but this is much fancier and I’m sure it will become a favorite of my husband’s. The added corn, bacon and hot pepper sauce are among the foods he loves.

Nice to meet another okra lover! Similar to a family favorite recipe (except these days I use liquid smoke instead of bacon). We always eat it over rice but it’s good over a piece of cornbread, too!

Okra isn’t something readily available here, although I have managed to find it frozen in an Indian supply store. I loved its texture. I’d love this dish of yours with some added hot chilli, and a nice Indian bread.
Yes it definitely would be good with more added heat! This was my first time making this and next time I too will make it hotter!

This is so ironic! I made something very similar to this. It doesn’t really have a name as it was my grandmother’s recipe. It turned out pretty well. I am going to try making this as well!
