Loaded Baked Mashed Potatoes
Leftover mashed potatoes, bacon, onion, eggs, cheese, butter, Ritz Crackers and more make up these delicious Loaded Baked Mashed Potatoes! Top it off with sour cream and you will think you are eating a regular loaded baked potato but without all the work of the potato shell.
Ingredients – Add sour cream (not shown)
as a topping if you wish.
In a small bowl using a fork, slightly
mix the eggs. Add the dried minced
onions, stir and set aside.
Spray a 2 quart casserole dish
with cooking spray.
Put the Ritz Crackers in a bag and
crush them into crumbs.
In a small bowl melt the butter,
add the Ritz Crackers and paprika.
Using a fork stir until combined
and set aside.
In a large bowl add the rest of the
ingredients. Stir until completely combined.
Place the potato mixture into
the greased casserole dish.
Sprinkle the Ritz Cracker
mixture over the top.
Bake in a preheated 375 degree oven
for 35-40 minutes until hot and the
crumb topping is golden brown.
Serve immediately and if you
wish top with sour cream!

- 6 bacon pieces, cooked and chopped into small pieces
- 1/2 cup shredded cheddar cheese
- 2 large eggs
- 1/4 cup ranch veggie dip (or sour cream)
- 1 Tbsp. dried minced onions
- 1/2 tsp salt
- 1/4 tsp pepper
- 15 Ritz Crackers
- 1 tsp dried parsley
- 1 tsp paprika
- 2 Tbsp. butter
Directions
- Preheat oven to 375 degrees.
- In a small bowl use a fork and beat the eggs slightly. Add the dried onions and set aside.
- Spray a 2 quart casserole dish with cooking spray.
- Put the Ritz Crackers in a bag and crush into crumbs.
- In a small bowl melt butter in the microwave. Add the paprika and cracker crumbs. Use a fork and stir until combined and set aside.
- In a large bowl add the rest of the ingredients. Stir until completely combined.
- Place potato mixture into the casserole dish.
- Sprinkle evenly with the cracker mixture.
- Bake for 35-40 minutes or until hot and the crumb topping is golden brown.
- Serve immediately and top with sour cream (optional).
