Slow Cooker Pork Roast & Sauerkraut
The meat just falls apart with a fork with this Slow Cooker Pork Roast & Sauerkraut. This is a family tradition that my Mom always made on New Years Day and still does. If you have had Sauerkraut before and don’t like the taste because it is too sour, fix it the way I do. I always rinse my Sauerkraut before I cook it.
Ingredients – Also salt and pepper to taste.
Peel and dice the onion.
Put the sauerkraut in a colander and rinse with cold water.
Using a large spoon, press the water out of the sauerkraut.
Place the pork roast in the center of the slow cooker.
Place the sauerkraut all the way around the pork roast.
Sprinkle the diced onion over the pork roast and sauerkraut.
Add enough water to come almost to the top of the sauerkraut.
Salt and pepper to taste.
Cook on low for 8 – 10 hours
Carefully remove the netting covering the Pork Roast, slice and serve.
For the sauerkraut, use a slotted spoon and let liquid drain out.
Place the sauerkraut into a serving bowl and serve.

1 pork roast
32 oz bag of sauerkraut
1 medium onion

Directions
Pork Roast:

Add water to the slow cooker almost to the top of the sauerkraut.
Salt and pepper to taste.
Cook on low for 8 – 10 hours.
Remove pork roast to a cutting board and carefully remove the netting.
Slice and serve.
SAUERKRAUT:
Use a slotted spoon so the liquid runs off and place the sauerkraut into a serving bowl then serve.

We are on the same page! I also made pork and sauerkraut on New Years Day. I don’t always but noticed I had a pork shoulder hogging up the freezer downstairs. Sometimes I swap the sauerkraut with cilantro and we turn it into tacos.
Good stuff!!! I too like using the leftovers the next day. I made extra mashed potatoes and made Loaded Baked Mashed Potatoes the next day…so good!

Never thought to do this in a slow cooker. My grandma and dad always roasted it in the oven, so that’s what I do. I’ll have to try it this way.

I like it rinsed before I cook it. A lot of people don’t rinse it. Totally different taste either way however, cooking it in the slow cooker is SO GOOD!! Have a great day Chris!
