Homemade Evaporated Milk

You don’t have Evaporated Milk for a recipe? No problem, just make it! Somebody asked me if they could use sweetened condensed milk in place of Evaporated Milk because she didn’t have any Evaporated Milk. The answer is no. Sweetened Condensed Milk is just as it says, sweet and full of sugar. Evaporated milk does not have any added sugar to it. It is simply whole milk that is cooked until it evaporates 60% of the water out of it. It is added to recipes like soup to make a rich broth.

Ingredients

  • 2 – 1/4 cups whole milk

Directions

  1. Pour the milk into a heavy saucepan.
  2. Over medium heat bring the milk to a boil stirring frequently.
  3. Once it boils, turn heat to a simmer. Simmer uncovered, stirring frequently and scraping the bottom of the pan, until the milk has reduced to 1 cup.
  4. Refrigerate, cover tightly and use within 4-6 days.

  1. This is so helpful. I have been looking for alternatives for evaporated milk and I guess I found the answer. Any tips on homemade buttermilk? In India, we do not get buttermilk at the grocery stores. The only ones available are spiced ones.

    • I add 1 Tbl of vinegar or lemon juice to one cup of milk and let it sit about 5 minutes. Also, if you make your own butter, the liquid left over is buttermilk. You can see that recipe by typing Easy Homemade Butter in the search box. It is simpler to add the vinegar or lemon though. I hope this helps. I have never seen spiced buttermilk where I live in the US.
