Hearty & Creamy Potato Soup

Hearty & Creamy Potato Soup is a soup that my husband has made for quite a few years now. My daughter absolutely loves it and so do we! She has been bugging him to make her some for months. He made a double batch so she could take some home.

In a large stockpot add all of the ingredients

except for the butter and evaporated milk.

Bring to a boil over medium heat cooking

until all of the vegetables are tender.

Remove from the heat.

Remove about a third of the soup.

Blend the third of the soup using an

immersion blender, regular blender or

food processor until thick and no chunks remain.

Return blended soup back into the soup pan.

Stir in the evaporated milk and butter.

Serve hot.

Ingredients

  • 6 medium potatoes, peeled and cut into bite size pieces
  • 3 carrots, peeled and diced small
  • 3 celery, diced small
  • 1 medium onion, diced small
  • 6 chicken bullion cubes
  • 3 quarts water (96 ounces)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tsp dried parsley
  • 1/2 cup butter (1 stick), melted
  • 12 oz can evaporated milk

Directions

  1. In a large stock pot add all of the ingredients except the butter and evaporated milk.
  2. Bring to a boil over medium heat and boil until the vegetables are all tender then remove from the heat.
  3. Remove a third of the soup. Using an immersion blender, regular blender or a food processor, blend the third until no lumps remain. Return to the stock pot.
  4. Stir the evaporated milk and butter into the soup and serve warm!

  2. Gosh, that looks delicious! I love making soup and my freezer always has plenty on standby. Mushroom soup for today’s lunch to warm my bones on a cold and dreary day in the UK.

  3. Looks so good. Cream soups are something I haven’t tried and since my grandmother died I have really missed hers. Now please confirm for me, I 1quart = 4 cups? So this would require 12 cups water?
