Cornish Game Hen
Who doesn’t like these dainty little Cornish Game Hen? I remember my Mom making these when I was growing up. She bought two Cornish Game Hen for the four of us. She took a knife and sliced the hens in half which I thought was cool because it looked like I was eating half of a chicken. I have continued to make these ever since I left their home.
Ingredients
Melt the butter and add all of the other spices to the butter, stir and set side.
Rinse the Cornish game hen and pat dry with paper towel.
Using a pastry brush, brush the butter mixture all over each hen on the front and back.
Place the hens, breast side down, side by side in a 2 quart casserole dish without a lid.
Bake in a preheated 350 degree oven for 60 minutes or until a thermometer pushed in the thickest part of the hen reads 165 degrees.

dried rosemary
garlic powder
onion powder
paprika
