Soft Shell Chicken Tacos
Another first for me, trying Soft Shell Chicken Tacos. Delicious taco flavored chicken along with all the flavors of the fillings stuffed into a tortilla! I was pleasantly surprised at how good they were! Kudos to my husband!
Today the grandchildren were here all day. It was time to put the Christmas tree up and they help us every year. While my grandson slept, my granddaughter helped me string on the lights. My husband was going to surprise us and prepare supper while we worked on the tree and what a nice surprise it was….delicious! After supper we all took part in hanging the ornaments on the tree. My 3-year-old grandson squealed with delight when it was his turn to hang one while my granddaughter shouted “That ones mine!” What wonderful memories!
Ingredients – Use your favorite kind of tortilla.
We weren’t crazy about the corn tortilla and will use flour tortillas from now on.
In a non stick skillet, cook the chicken until no pink remains and chicken is done.
My husband did not add any oil to the pan but if you need it you can.
Add 2 Tbl of taco seasoning to the chicken and mix well.
Sauté the sliced onions in about 1 Tbl of butter until translucent.
Sauté the sliced peppers in about 1 Tbl of butter until tender.
Lay a tortilla flat and fill it with all of your favorite ingredients.
Fold the tortilla in half and enjoy!

Ingredients
6 medium chicken breasts, sliced into small pieces
2 Tbl taco seasoning
1 pack Tortilla, small size
3 different color peppers, sliced thin with inside seeds discarded
1 Tbl butter
2 medium onion, peeled and sliced thin
1 Tbl butter
8 oz sour cream
3 tomatoes, diced
2 cups shredded lettuce
8 oz shredded cheese (your favorite)
Directions
In a non stick skillet over medium heat, cook chicken pieces until no pink remains and chicken is cooked through. We did not add oil to the pan but you can if needed. Remove from the heat and add taco seasoning to the chicken and mix well.
Sauté onion in 1 Tbl butter until onion is translucent.
Sauté pepper slices with 1 Tbl butter until tender.
Lay a tortilla flat and fill with all your favorite ingredients. Fold the tortilla in half and enjoy! Let everyone make their own.

That’s great! I do most of the cooking and my husband always does the dishes. If he should cook a meal then I do dishes. Nice team work with our guys we are bought pretty lucky!
