Homemade Pancakes
Don’t ever buy pancake mix again! It is so inexpensive to mix up a huge batch of these delicious Homemade Pancakes! One batch makes 6-12 servings (depending on the size) of Homemade Pancakes. Leftovers can be stored in the refrigerator and even frozen.
Ingredients
Melt the butter in a medium bowl in the microwave and set aside.
In another medium bowl, whisk dry ingredients together.
Pour milk, egg and vanilla into the butter and whisk.
Whisk liquid mixture into the dry ingredients until smooth with no lumps.
Heat a large non stick pan over medium-high heat. Brush vegetable oil over the pan. Ladle a scoop of batter onto the hot pan. Cook until the bottom turns a golden brown. Carefully flip it over and continue cooking until that side is also golden brown and pancake is cooked through.
Serve with butter and syrup.

3 – 1/2 tsp baking powder
1 tsp salt
1 Tbl sugar
1 – 1/4 cups milk
1 egg, slightly beaten
3 Tbl butter
1 tsp vanilla extract

Whisk liquid mixture into the dry ingredients until creamy and with no lumps remaining.
Heat a large non stick pan over medium-high heat. Brush vegetable oil over the pans surface. Place a scoop of batter, about 1/2 cup, into the hot pan heating until the bottom is golden brown. This should take about 1-2 minutes. The batter will bubble on the surface. When the bubbles stop popping and the pancake is dry around the edges, the pancake is ready to flip. Carefully flip pancake over cooking until the other side is golden brown and the center is cooked through.
Serve with butter and syrup and enjoy!

Darcy ( my baby sister who is taller than me so I can’t call her “little” sister – ha ha) and I own the farm together and she is a bake-a-holic. She makes made from scratch pancakes almost every weekend because that is my grandsons favorite. (I have custody of him – he is 9)
