Ingredients

1 – 1/2 cups flour

3 – 1/2 tsp baking powder

1 tsp salt

1 Tbl sugar

1 – 1/4 cups milk

1 egg, slightly beaten

3 Tbl butter

1 tsp vanilla extract

Directions

In a medium bowl melt butter and set aside.

In another medium bowl, mix dry ingredients.

Pour milk, egg and vanilla into butter and whisk together.

Whisk liquid mixture into the dry ingredients until creamy and with no lumps remaining.

Heat a large non stick pan over medium-high heat. Brush vegetable oil over the pans surface. Place a scoop of batter, about 1/2 cup, into the hot pan heating until the bottom is golden brown. This should take about 1-2 minutes. The batter will bubble on the surface. When the bubbles stop popping and the pancake is dry around the edges, the pancake is ready to flip. Carefully flip pancake over cooking until the other side is golden brown and the center is cooked through.

Serve with butter and syrup and enjoy!

  1. Darcy ( my baby sister who is taller than me so I can’t call her “little” sister – ha ha) and I own the farm together and she is a bake-a-holic. She makes made from scratch pancakes almost every weekend because that is my grandsons favorite. (I have custody of him – he is 9)
