Macaroni and Cheese
Do you want to try a different kind of Macaroni and Cheese, one that I have made for decades and is full of creamy goodness? If you like to eat healthy ….. look away! For those loving comfort food …. you’re welcome!
I have never even tried any other Macaroni and Cheese recipe except this one. The cheesy liquid soaks into the macaroni causing an amazing taste making it hard not to go back for seconds!
Ingredients
Boil the pasta according to the directions on the package but just until al dente, with a little crunch, as it will finish cooking in the oven. Drain and set aside.
Dice the onion.
Spray a four quart oven safe casserole dish with cooking spray.
Place 1/3rd of the pasta on the bottom of the casserole dish.
Sprinkle 1/3rd of the onion on top of the pasta.
Salt and pepper to taste.
Cover the macaroni with your favorite cheese.
I have always used American Cheese.
It takes 6 slices per layer.
Repeat for a second and third layer.
Pour Half & Half to the top of the pasta.
If a quart is not enough, finish with milk.
Put a lid on and bake in a preheated 350 degree oven for one hour.
When it comes out of the oven, remove the lid and stir. It will still have a lot of liquid. Let it sit for about 15 minutes, stirring every five minutes. As the steam escapes the cheesy liquid absorbs into the pasta and it thickens up. It is ready when almost all of the liquid is absorbed.
Place on a plate and serve

16 oz pasta
18 slices American Cheese, or your favorite
1 medium onion
salt and pepper to taste
1 quart Half & Half
milk, if needed
Directions
Preheat oven to 350 degrees.
In a large pot cook pasta according to the package directions but just until al dente, with a slight crunch. Drain and set aside.
Spray a four quart oven safe casserole dish with cooking spray.
Dice the onion.
Place I/3 of the pasta in the casserole. Place 1/3 of the diced onion on top of the pasta.
Sprinkle with salt and pepper. Top with six pieces of cheese, breaking in half to fit.
Repeat for a total of three layers ending with cheese.
Pour Half & Half over the top until it reaches the top of the pasta. If it doesn’t, add milk until it does.
Place the lid on and bake for one hour.
Remove from the oven and remove the lid. Stir (there will be a lot of liquid left) and let sit 15 minutes without the lid, stirring every five minutes so the steam can escape. By the end of 15 minutes almost all of the cheesy liquid should be absorbed.
Now it should be ready to eat…..enjoy!

What’s half & half Diane?
It is half milk-half cream. It is what it is called when we buy it from the store premixed. You can also make this with just all whole milk.
