Ingredients

1 whole chicken, cut up

1/4 cup cider vinegar

3 Tbl water

1/2 cup oil

1 – .7 oz pouch of Good Seasons Italian Salad Dressing

salt to taste

Directions

Mix vinegar, water, oil and Italian Salad Dressing with a whisk.

Put cut up chicken in a bag. Pour prepared salad dressing on top. Squish the bag to evenly distribute the salad dressing amongst the chicken pieces. Seal the bag getting out all the air that you can. Refrigerate 2-4 hours.

Preheat oven to 400 degrees.

Spray a large baking sheet with cooking spray. Drain the marinade from the chicken pieces and discard. Place the chicken pieces on a baking sheet skin side up. Keep the chicken pieces from touching each other and place the breasts in the middle of the baking sheet. Sprinkle with salt.

Bake for 30 minutes. Turn the temperature down to 350 degrees and bake 30 minutes more or until the thickest piece of chicken is 160-165 degrees.

Turn the oven off and the broiler on. Broil the chicken for 5-10 minutes (watching carefully) until the skin is a crispy brown and the thickest part of the breast is 165-170 degrees. It may be necessary to remove the smaller pieces before the thick breasts so you don’t overcook them. Total cooking time with broiling was 1 hour for me.
