Oven Roasted Chicken and Vegetables
I adapted this recipe from a Lipton Onion Soup envelope recipe. (www.liptonsoup.com) It is very healthy and delicious.
Ingredients
Peel and dice potatoes and carrots.
In a large bowl, combine chicken,
carrots, olive oil and potatoes.
Sprinkle on the envelope of Lipton Onion
Soup Mix and garlic powder.
Mix until combined.
Lightly spray a 9″ x 13″ baking
pan with cooking spray.
Pour chicken and veggies into the pan.
Sprinkle with dried thyme.
Bake at 450 degrees for 40-45 minutes or until
chicken is cooked through and veggies are
tender. Stir halfway through baking.

- 4 medium potatoes
- 4 medium carrots
- 1/2 tsp garlic powder
- 1/2 cup olive oil

Optional: Your favorite sauce or gravy can be drizzled on top
Directions
- Preheat oven to 450 degrees.

- Using cooking spray, lightly grease a 9″ x 13″ baking pan.
- Pour chicken and veggies into the pan. Sprinkle with thyme.
- Bake on the center rack for 40-45 minutes or until the chicken is cooked through and the veggies are tender. Stir halfway through cooking.
Optional: Drizzle your favorite sauce or gravy on top.
