Grilled Cheese Sandwich

IMG_2233

Yes my tomato is almost bigger than my sandwich! Even though this is called a Grilled Cheese Sandwich, mine should be called Grilled Tomato with Cheese Sandwich! This is another one of those “garden tomato only” sandwiches. I only eat these when the garden tomatoes are at their peak which happens to be right now.

When I was a kid we always ate these sandwiches with tomato soup. Money was tight and Grilled Cheese Sandwiches with Tomato Soup was cheap and always hit the spot!

This recipe is one of those posts that you think everybody knows how to fix. Not so! We have new cooks and people from all over the world reading this blog. So this one is for them.

Ingredients

2 slices bread, your favorite kind

1-2 Tbl butter, softened

1 garden ripe tomato, sliced thick

Miracle Whip or Mayonnaise, to taste

2 pieces American Cheese, or your favorite cheese

Directions

Lay your bread pieces flat and butter one side of each piece of bread. Make sure every spot of the bread has butter on it.

Place one piece of bread, butter side down, onto a hot frying pan over medium-low heat. Quickly place your cheese on top of the unbuttered side trying to cover as much of the bread as you can with the cheese. Place other piece of bread, butter side up, on the top of the cheese. Cook until the bread is a golden brown. Turn over and brown the other side to a golden brown too.

Remove from the pan and carefully pull apart the two slices of bread. Lay them flat and place the sliced tomato on top of one piece of bread. Spread Miracle Whip or Mayonnaise on the other piece of bread. Put the two pieces of bread together and enjoy!
