Baked Okra


Our garden is exploding with Okra! I want to put some in the freezer but I can’t stop eating it. I love this stuff! This Baked Okra recipe is so simple and my favorite Okra recipe that I make.

I also like it with parmesan cheese added on top. There are so many ways to change the taste just by adding one ingredient. I made this for my lunch and my 3-year-old Grandson ate almost half of it!

Baked Okra



1# okra, rinsed clean and completely dry

Kosher salt and pepper to taste

3 Tbl olive oil


Preheat oven to 450 degrees. Cut the ends off of the okra. Slice the larger okra in half. Put okra into a shallow baking dish and drizzle olive oil over top. Mix making sure the okra is all coated in the oil. Let sit for 5 minutes then mix again. Sprinkle with salt and pepper. Bake uncovered for 15 minutes turning over halfway through.
