Is it possible that three people could devour this entire Marinated Cucumber, Tomato & Onion Salad in one sitting? Yes we did! I love this so much but mostly with our fresh garden veggies. I wish August would never end! All these fresh vegetables are so delicious!

Ingredients

IMG_1962

Start by rinsing the cucumbers and

the tomatoes. Peel the cucumbers

and slice them in half lengthwise

and then into 1/4″ slices.

IMG_1965

Peel the onion, slice it in half

then slice it into 1/4″ pieces.

Separate all of the pieces.

IMG_1968

Cut the top off of the tomatoes.

Cut them into bite size wedges.

IMG_1970

Put the veggies into a large bowl.

IMG_1972

Mix the veggies together.

IMG_1974

In a medium bowl, mix the marinade

ingredients. I used an immersion

blender to mix mine. You can mix

anyway you would like,

even with a whisk.

Pour the marinade over the veggies

and toss. Cover and refrigerate for

at least on hour or longer. But honestly,

mine never last that long. We are into

it after 1/2 hour and it’s still delicious!

Ingredients

  • 3 medium cucumbers
  • 3 large tomatoes
  • 1 medium onion

Marinade:

  • 1 cup water
  • 1/2 cup white vinegar
  • 1/4 cup sugar
  • 1/4 cup olive oil
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp celery seed

Directions

  1. Rinse the tomatoes and the cucumbers. Peel the cucumbers, cut them in half lengthwise and slice them 1/4″ thick.
  2. Peel the onion, slice it in half, slice the halves 1/4″ thick and separate the pieces.
  3. Cut the top off of the tomatoes. Slice the tomato into bite size wedges.
  4. Place the veggies into a large bowl and toss with a large spoon.
  5. Mix together all of the marinade ingredients until the sugar dissolves. I used an immersion blender but anything will work including a whisk.

  7. Cover the bowl and refrigerate for an hour or more, then serve.

  1. Noticed you used white vinegar, is that by choice? Would apple cider or other milder vinegar work too? As always, thanks for the great tips. Aloha! 🙂

  2. My grandmother used to keep a perpetual container of this salad in the fridge. As we used it up, she’d just keep adding more
veggies to the mix, with the original vinegar dressing, which miraculously never seemed to run out. Somehow, like sourdough starter, it just kept replenishing itself!

  3. Am eating cuke/sweet onion/cherry tomato salad as I read your recipe. What a coincidence! Have not tried the touch of oil in my marinade, sounds like something good to try.

  4. Next on my list to make. I’ve had something like this at the Chinese Buffet but haven’t been able to duplicate it at home. Thanks for the heads up … g

  5. Hi there, I found your blog by means of Google even as searching for a comparable topic, your web site came up, it appears to be like good. I have bookmarked it in my google bookmarks.

  6. This is incredibly tasty! Refreshing and very healthy – I think this is what I am going to take with me this summer when we go picnicking in the woods:)

  7. I love this in the summer time when veggies are fresh. I have never put olive oil or celery seed in mine…I will have to try them. Hugs

      • I am anxious to get out and work in the yard, but it is the same here…we have had so much rain it is like a bog. I hope you are having a nice weekend.
