Cherry Pie Quesadilla

Do you like fresh Cherry Pie and either don’t know how to make a pie crust or you just don’t like to make a pie crust? Cherry Pie filling inside two flour tortillas topped with cinnamon and sugar fixes that problem! These tasted even better than I had hoped for. Learn how quick and easy these are to make with no pie crust to worry about.

I used our quesadilla maker but you could do the same thing in a frying pan, bake in the oven, use your George Foreman grill or even a griddle. All you need to do is cook the tortilla and that doesn’t take long! Use any type of pie filling you want.

I have to believe there are a lot fewer calories in these than regular cherry pie. The taste of the tortilla brushed with butter and sprinkled with cinnamon and sugar was delicious!

Ingredients

Melt the butter.

Mix the sugar and cinnamon.

Brush half of the butter on one side of a tortilla. Turn tortilla over and place with the butter side down on a large plate.

Spread pie filling evenly onto the tortilla within 1″ from the edge.

Place another tortilla on top of the cherries. Brush the top with the remaining butter.

Sprinkle cinnamon sugar mixture evenly over tortilla.

I have a quesadilla maker so I used it to make my pies. I placed my hand under the bottom buttered tortilla and placed the entire pie onto my preheated quesadilla maker. Cook the pie for 7-10 minutes or until the tortillas starts to get stiff and lightly brown. Check it frequently so it doesn’t burn.

Using a large knife, cut pie into pieces. This helps to seal the edges. Serve hot!

Cherry Pie Quesdilla

  • 1 can cherry pie filling
  • 2 flour tortillas
  • 1 Tbsp. butter
  • 1 Tbsp. sugar
  • 1/4 tsp. cinnamon

Directions

  1. Lay one tortilla on a large plate.
  2. Melt the butter in the microwave. Brush half of the butter on one side of a tortilla. Turn tortilla over and place butter side down on the plate.
  3. Pour cherry pie filling evenly over the tortilla within 1″ from the edge.
  4. Place other tortilla on top of the cherries.
  5. Mix sugar with cinnamon. Brush the rest of the butter on top of the top tortilla. Sprinkle with all of the cinnamon sugar mixture.
  6. Preheat quesadilla maker. Slide your hand under the buttered pie and slide onto the quesadilla maker. Cook for 7-10 minutes or until tortilla is slightly brown. Watch carefully so it doesn’t burn. Slide off onto a cutting board with a spatula. Using a large knife, cut the pie into pieces immediately. This will help seal the edge. Serve hot!

NOTE: Another way to cook these ( if you don’t have a quesadilla maker) is to use an oven, George Foreman type grill, frying pan, Panini maker or just about any means to cook both sides of the tortillas. To cook them this way, use smaller tortillas and fold them in half to make individual hand-held pies.

  1. What a great idea. How would you suggest it gets cooked if one doesn’t have any of those special appliances you named? How would you cook it on a frying pan? Would a waffle iron work?

    • Yes a waffle iron would work or use a large frying pan with a little buttter melted. For the pan I would put the filling in the center of the tortilla and just fold it over. Then carefully use a spatula and flip it over cooking the other side. It’s basically already edible you are just browning and heating the filling. I would experiment with the waffle iron though. It’s similar to the quesadilla maker. You could even cut the tortillas to the waffle iron size, fill and cook.

  2. I’m wondering if this technique would work with other fruit pie filling flavors also? My husband wants me to make this for him, he thinks your recipe looks great! Me too!

    • Kathy it most definitely would. These were so delicious. I made extra and ate them the next day too and they were still good. When you make them, just be careful not to overfill them with the pie filling or they will ooze out. My first one I overfilled but then figured out how much to put on it and they were perfect. They are like eating pie without all the calories.
