Fresh Basil Pesto Sauce (with tortellini)

Do you love Pesto Sauce? Have you always been intimidated by the name and have never tried to make it yourself? I know I was up until about six months ago. I was shocked at how quick and easy it is to make. The first batch I made I didn’t have fresh basil but I had a huge jar of basil I dehydrated. When I make it with dehydrated basil, I let it sit in the olive oil for up to an hour before mixing it up so it can rehydrate. This batch, however, I made with our freshly picked basil from our garden and it was ready to use immediately. Put this Basil Pesto Sauce with three cheese tortellini and it is absolutely amazing, but of course you can use it with whatever you would like!

Ingredients

BASIL PESTO SAUCE: Make this before cooking the tortellini.

Wash basil and gently pat dry with a paper towel. Put basil in a food processor or blender (I used my immersion blender). Add cheese, garlic and olive oil.

Blend until there are no more leaf pieces left; set aside. Yes that’s all there is to it!

TORTELLINI:

Boil tortellini according to package directions.

Drain well.

Pour Basil Pesto Sauce over tortellini. Using a large spoon, gently mix Basil Pesto Sauce and tortellini together.

Serve immediately.

Basil Pesto Sauce

Ingredients

4 – 1/2 cups fresh basil (or 9 Tbl dried)

3/4 cup olive oil

3/4 cup freshly grated parmesan cheese

1 clove garlic, peeled and chopped (or 1/4 tsp garlic powder)

Directions

Wash and pat dry the fresh basil. (If using dried basil put it in the olive oil for up to an hour before proceeding).

In a food processor, blender or with an immersion blender:  

Mix basil with the olive oil, garlic and parmesan cheese until no leaf particles remain. Using a large spoon, carefully mix with hot cooked tortellini and serve.
